History of This refreshing drink

Indian World's famous traditional card-based drink with the Indian Subcontinent's origin, called Lassi, always called Punjab di lassi. It originates from Punjab and Multan, an earlier part of India now in Pakistan.  

It is a mixture of Curd (Dahi in the Indian language), Yoghurt, Little water or without water, and sometimes fruits like Alphonso Strawberry and Banana. 

It is a fermented beverage that is a super cooling agent in scorching summer. It is a popular Indian traditional drink.

Indian Lassi is a favourite drink in Indian restaurants in India and abroad.  

I had this drink in the U.S., U.K., Australia, Singapore, and Hong Kong, with some variations, but away. It is the same traditional Indian drink.

Since Mangoes lassi has a history of before 1000 B.C., while 2 tablespoons sugar came to India after 640 A.D., Fruits like Hapus were alternate sources of sweetness in recipes.

It was used for Alphonso's refreshing, sweet, tangy taste, making you energetic. 

Since Alphonso has a creamy, sweet taste, Mangos Pulp has a tender and delicate texture, little or non-fibrous fruit, and soft and sweet juicy Pulp.

Since then, it has been blended with curd (Dahi) or yoghurt, saffron strands, little ground cardamom powder, coconut sugar, and ice cubes.

Alphonso Mango Lassi

Alphonso goes very well with Lassi, loaded with a creamy taste and sweetness.  

Mangoes Pulp has a tender and delicate texture, little or non-fibrous fruit, and sweet and tangy juicy Pulp. It is a yummy, soothing lassi in all Mango seasons because you get ripe fruit in summer, like Alphonso mangoes.

Simple Mango Lassi Recipe 

It has multiple variants, like

You can choose ripe fruits as per your choice. Here, we have taken Alphonso Mangoes or sweetened Pulp made from Fresh mangoes as it is significantly less fibre.

You may use Kesar Aam ka pulp, but it is a bit fibrous; it might change your taste and colour of Lassi.

Ingredients 

  • You can take 3 to 4 Alphonso mangoes, peel them off and chop mango cubes. It will be nearly two to two cups of alphonso cubes.
  • Two to three tablespoons of malai (fresh cream) and more health-conscious can be avoided if required.
  • Yoghurt base or yoghurt milk or Dahi (Curd) nearly two cups (means almost 500 grams)
  • Half a tablespoon of rose water, or you can use Gulkand (Gulqand, rose petal jam)
  • Grounded Teaspoon cardamom powder half teaspoon
  • Optional Ice cubes are okay with it as they would reduce the consistency of Lassi. 
  • I suggest adding ice cubes in the afternoon, not the evening.
  • Add sugar, jaggery, Honey, Stevia, or Palm sugar as per your taste and choice because, generally, Indian mangoes Hapus are a sweet delight. Still, you can take nearly three to five tablespoons of sugar.
  • Add chopped cashew nuts, saffron strands, almonds (Badam), walnuts (akhrot), Anjeer (fig), and mint leaves for garnishing.

How to Make it

  • First, make a Best Mango puree of alphonso cubes in a mixer or grinder.
  • Now add the fresh cream first and get it blended with puree. It could also be a tasty dessert as it becomes Alphonso cream, like what you gain in Mahabaleshwar Strawberry cream. You can try this once this summer. A heavenly delight for your complete family).
  • Add chilled curd in the same mix with some ice cubes; blend it for a few seconds until it becomes smoothie-like.
  • Add a pinch of grounded cardamom powder.
  • Dry fruits, you can choose and change as per your taste. Garnish this with saffron strands, chopped cashew nuts, almonds, walnuts, Anjeer, and mint leaves. Serve in a glass.
  • Add more ice cubes or a little water if you need a thin consistency.

How to make spicy Best tasting Mango Lassi

There are two options for making a Masala refreshing drink. Add a quarter spoonful of salt and Kashmiri Mirch Masala to the sweet Lassi. 

Another process is to mix the salt and Kashmiri Mirch Masala powder. Moisten the edge of the glass where you will serve the Lassi.

When empty, take this salt and Masala on a plate before serving it. Just move the glass edge moistened with water or Lassi to the plate of Masala and salt.

Only one side will give you an option at your home. Those who want plain Lassi can drink from one hand.

Those who wish to have a Masala refreshing drink can drink from the rim side where you have sprinkled Masala and salt. 

How to Make it with Mango Juice

You need to replace step 1 in ingredients where you can add mangoes juice to this Lassi instead of ripe fruits or Alphonso.

It can be prepared in all seasons, preferably post-summer in the winter and rainy seasons.

Recipe using Mango Pulp

You need to replace step 1 in ingredients where you can add Alphonso sweetened Pulp or Kesar Aam pulp as per your choice to this Lassi instead of ripe tropical fruit or Alphonso.

It can be done in all seasons, preferably post-summer in the rainy and winter seasons. 

How to Make it without yoghurt

You need to replace yoghurt-based lassi or yoghurt milk-based lassi with curd or vegan curd if you require it as per your choice.

How to Make it with vegan curd

You can buy ready vegan curd or search for any dairy-free recipe, like smooth vegan lemon curd. You can also make vegan curd using cashew nut milk, a good substitute for dairy curd.

You can also try some soya milk curd. It was created with vinegar.

Some special tip

  • You can use canned Pulp instead of ripe or homemade Pulp.
  • Pulp is readily available in Indian stores, or you can buy authentic G.I. tag-certified Alphonso Mango Pulp directly from here.
  • Use sweet yoghurt, less sour and thick if its consistency is thin, reducing ice cubes.
  • Add Saffron strands in one to two teaspoons of milk for 5 to 10 mins before starting your recipe to give more saffron aroma.
  • You can add a scoop of Rajbhog ice cream or Vanilla ice cream instead of dry fruit as per your choice.
  • Try roasted almonds and cashews instead of everyday dry fruits, which should be finely chopped.
  • If you are making it for later servings, you may store it in the refrigerator before serving.
  • You can keep this in ice cream cubes and store them in the freezer. You will enjoy this like an ice cream dessert.
  • You can add sugar, honey, or other sweeteners as per your choices, but if the Alphonso is ripe, I will not put any sweeteners like sugar.
  • As an option, you can add a pinch of Saunth (dried ginger, sountha) for taste as it will make you feel heavy saunth (dried ginger, sountha) will help you digest.
