Ingredients:
1 cup quinoa
2 cups chicken broth
One roasted sweet potato, diced (about 2 cups)
1/4 cup chopped fresh parsley
Three tablespoons of olive oil
Two tablespoons of red wine vinegar
One tablespoon of freshly squeezed orange juice
One teaspoon of smoked paprika
1/2 teaspoon chili powder
1/4 teaspoon salt
Freshly ground black pepper, to taste

Instructions:
1. Put chicken broth in a large pot to a boil.
Add quinoa and stir to combine.
Cover and reduce heat to low.
Simmer the above mixture for about 15 minutes until all the liquid has been absorbed.
Remove the bowl of the above mixture from heat and fluff with a fork.
2. In a large bowl, combine cooked quinoa, roasted sweet potato, parsley, olive oil, red wine vinegar, orange juice, smoked paprika, chili powder, salt, and black pepper.
Stir until everything is evenly mixed.
3. Serve them either immediately or store them in the fridge for later.
