Fresh fruit gives the traditional hand-pressed ras when the season is open. Fruit is dispatched at 70 to 80% ripeness and ripens fully within about three days of delivery, so plan the aamras a few days after the box arrives. A pulp tin is a different product from freshly squeezed ras and will taste somewhat different; choose the one that fits the occasion.
