What is aamras and aamras puri
Aamras is made from aam (mango) and ras (juice or essence). It is thick mango pulp, usually from ripe Alphonso, eaten as a dessert or served with hot puris. In Maharashtra and Gujarat it is a regular on festival and Sunday lunch tables. Some families add a pinch of nutmeg or a few saffron threads soaked in warm milk, and some add a little sugar when the fruit is not fully sweet.
Aamras puri is the same pulp served next to freshly fried puris. The contrast of hot, crisp bread and cool, sweet pulp is the whole idea. If you want to build a full plate, pair it with vatana usal or a simple vegetable and keep the aamras plain so the mango stays the star.
Ready-made aamras from a pulp tin
If you search for readymade aamras in Pune, a good pulp tin is the practical answer in any month. Our Alphonso pulp comes from the same variety people use for homemade aamras. Open the tin, stir, chill and serve. Because pulp is sold all year, you can plan an aamras puri lunch for Gudhi Padwa, a family function or a Sunday without waiting for the fresh crop.
Mango pulp is a recognised product category in India. APEDA lists Alphonso among the varieties used for pulp, which is sterilised and packed in aseptic bags or hermetically sealed cans. For serving, taste the pulp first and add sugar only if you need to.
Fresh Alphonso aamras in season
Fresh Alphonso is harvested about February to June, with the best supply from March to May. The 2027 season opens on 1 February 2027. Until then the fresh mango listings show as unavailable, and we do not sell fresh Alphonso outside the season. When it opens, you can order a dozen, ripen it at home and squeeze your own aamras.
Fruit that makes good aamras should smell sweet near the stalk and give slightly under a thumb. Hard or scentless fruit needs more days. We harvest by hand with a zela pole fitted with a catching net, so fruit is not shaken off the tree. That matters because bruised fruit turns patchy when it ripens. We do not use carbide. Our Alphonso mangoes are ripened naturally on hay beds.
The dozen you order is graded by fruit weight, from small fruit of 150 to 180 g to jumbo of 275 to 300 g. Small and medium fruit is perfectly good for aamras, since you are squeezing it anyway. Larger grades suit gifting and eating by the slice. A dozen weighs roughly 1.8 to 3.3 kg depending on grade.
Aamras recipe
This is the plain Maharashtrian method. Use fruit that is fully ripe, fragrant and at room temperature.
Ingredients
- 6 ripe Alphonso mangoes
- 1 to 2 teaspoons caster sugar, only if the mangoes are slightly under-ripe
- A pinch of freshly grated nutmeg
- 6 to 8 saffron threads in 1 tablespoon warm milk (optional)
Method
- Wash the mangoes. Do not chill them first, because cold pulp loses aroma.
- Roll each mango between your palms for about 30 seconds to loosen the pulp from the seed.
- Make a small slit at the tip and squeeze the pulp into a wide bowl. Peel the skin and scrape off the remaining pulp.
- Mix the pulp. Add the sugar only if needed, then the nutmeg and the saffron milk if using.
- Chill for 20 minutes. Serve cold with hot puris.
In a hurry, empty a pulp tin into a bowl, add the nutmeg and chill. The texture of pulp is slightly smoother than hand-squeezed fruit, which many people like for aamras puri.
Delivery to Pune
We dispatch by Blue Dart, and about 65% of Indian PIN codes get next-day delivery. Enter your Pune PIN code at checkout to see what applies to your address. We do not promise a delivery day for any named city. Pulp tins are sealed and travel without fuss. Fresh fruit is packed in a corrugated box with a hay bed, and it arrives firm so that it can finish ripening at home.
If anything arrives damaged, report it within 24 hours of delivery by writing to support@alphonsomango.in. For a function, order a few days ahead and keep fruit at room temperature, in a single layer, until it softens.
Storage and leftovers
Keep unopened tins in a cool, dry place. Once opened, move the pulp to a clean covered container in the refrigerator and follow the storage guidance printed on the tin. Fresh aamras tastes best on the day it is made. Keep any extra covered in the refrigerator and use it within a day or two.
Leftover aamras need not go to waste. Spread a thin layer on a greased plate or silicone mat and dry it to make aam papad, a chewy sheet that rolls up and keeps in an airtight box. Our aam papad recipe has the full method.
What is in a bowl of aamras
Aamras is mostly mango, so its nutrition follows the fruit. According to Wikipedia, 100 g of raw mango provides about 36 mg of vitamin C, roughly 40% of the Daily Value. Mango also carries natural sugar, so it is a sweet dish and not a free-for-all. If you manage diabetes or any health condition, ask your doctor or dietitian how much suits you.

What is aamras puri?
Aamras puri is thick mango pulp, usually Alphonso, served with hot puffed puris. It is a Maharashtrian and Gujarati favourite for festivals and Sunday lunches. The pulp is eaten cold with the warm puri, and it is lightly flavoured with nutmeg or saffron when families want extra depth.
Does aamras need sugar?
Not always. Fully ripe Alphonso is sweet enough, so many families add nothing. If the fruit is slightly under-ripe, one or two teaspoons of caster sugar for six mangoes is enough. Taste the pulp first, whether fresh or from a tin, then decide.
