We have for you a recipe for the delicious fresh mango-flavoured cake.

This dish is another way to add seasonal aam to your dish.

The delicate and soft cake has dense milk's rich, smooth taste.

This eggless cake is an all-time favourite.

Recipe

  • One cup mango blocks or 1/2 cup mango pulp. Alphonso mangoes work the best for this recipe. You can use other kinds too.
  • ¾ cup (180) grams of sugar
  • ½ cup (120 ml) of oil 
  • One tablespoon vinegar
  • ½ tablespoon yellow food dye 
  • 2 cups (280 gms) maida/all-purpose flour
  • 1 cup condensed milk
  • One tablespoon of baking soda
  • ¼ spoon of baking powder 
  • 1/2 tablespoon salt 
  • ¼ cup (60 ml) milk 
  • Salt or sandalwood or sand or a preheated oven to 300 C

To begin with, take the cup of mango and sugar in a blender. 

Move it to a bigger bowl. Blend totally. 

Include 1 cup of oil, 1 tablespoon of vinegar, and 1 tablespoon of food dye. 

Utilizing a whisk, ensure everything is joined and blended well. 

Now, use a sift to add maida to the mix.

Add one tablespoon of baking soda and ¼ tablespoon of baking powder.

Add 1 cup condensed milk and 1/2 tablespoon salt. 

Filter flour to ensure there are no bumps. 

Blend well. Use the cut-and-fold method. 

Add 2 cups of milk and blend until the batter is combined well. 

Pour the cake batter into a greased cake pan.

In the cooker, include 10 cups of salt.

Close without putting the gasket and whistle, and cook for 10 minutes.

This process makes your cooker work like a preheated oven.

Now place your cake pan in the cooker.

Place butter paper at the base to avoid spilling the batter.

Tap twice to level uniformly and eliminate air bubbles, if any. 

Cook the cake for 20-25 minutes. Your baking time may exceed.

To check if your dish is cooked, poke a fork or toothpick through it.

If there is no batter stuck to it, your dish is cooked.

Permit the cake to cool. Now, separate the cake from the pan. 

Serve with whipping cream on the top. You can also cover it with cream and decorate it with sprinkles or fruit.
