Hapus Ice cream Recipe - AlphonsoMango.in

Hapus ice cream is a no-churn mango ice cream made with whipped cream, condensed milk and ripe Alphonso mango pulp. This hapus ice cream recipe shows how to make it at home without a machine, and how to choose fruit for good colour and flavour.

What hapus ice cream is and why it works without a machine

Hapus is the Marathi name for the Alphonso mango, and hapus ice cream is the mango ice cream that many families make in the fruit season. Most recipes ask for an ice cream machine, but a no-churn version works just as well. The whipped cream gives air, the condensed milk gives sweetness and a soft texture, and the mango pulp gives colour and flavour. Freezing does the rest.

The result is a smooth, scoopable ice cream with clear mango flavour. It is richer than a sorbet and lighter than a custard-based ice cream, which makes it a good dessert for a family meal or a small gathering.

Choosing the Alphonso for ice cream

Devgad Alphonso mango for hapus ice cream

Alphonso gives the best colour and flavour for this recipe. Wikipedia describes Alphonso pulp as rich, creamy and non-fibrous, which means it blends into the cream without leaving threads in the scoop. Choose fruit that is fully ripe and fragrant, and blend the pulp smooth before you measure it. Both our Ratnagiri and Devgad Alphonso are sold by the dozen, and both are the same variety.

  • Ripe fresh fruit: about two medium fruit make a cup of pulp. Taste it and adjust the sugar in the condensed milk if needed.
  • Alphonso Mango Pulp Tin: ready to use and available all year, so this recipe does not depend on the fruit season.
  • Chilled pulp: cold pulp folds into the cream without melting it.

Fruit size matters less than ripeness. A large fruit and a small one can give the same amount of pulp per cup, so buy by the size that suits your budget and the number of people you are feeding. Keep a few spare pieces for garnish if you want a fruity topping.

Do not use under-ripe fruit. It makes the ice cream sharp and pale, and the flavour does not develop in the freezer.

Hapus ice cream recipe, step by step

This recipe makes about one litre, enough for six to eight scoops. The active work takes about 20 minutes, and the rest is freezing time. Keep the cream cold throughout, because warm cream will not whip properly.

Ingredients

  • 1 cup (250 ml) heavy cream, very cold
  • 1/2 cup (about 200 g) sweetened condensed milk
  • 1 cup Alphonso mango pulp, chilled
  • 1/4 tsp ground cardamom
  • a pinch of salt
  • 1 tbsp chopped pistachios

Method

  1. Chill the mixing bowl and beaters for 15 minutes before you start.
  2. Whip the cream until it holds soft peaks, about 3 to 4 minutes with a hand whisk or 2 minutes with an electric beater.
  3. Fold in the condensed milk, cardamom and salt gently, so the cream keeps its air.
  4. Fold in the mango pulp until the colour is even, stopping before the mixture turns flat.
  5. Pour into a lidded container, scatter the pistachios on top and freeze for at least 6 hours or overnight.
  6. Let the ice cream stand for 5 minutes before scooping.

If the mixture looks thin after folding in the pulp, chill the bowl for ten minutes and whip again briefly. A thin base makes an icy ice cream, so do not skip the cooling step.

Freezing, texture and avoiding ice crystals

Ice crystals are the main enemy of home ice cream. A lidded, airtight container helps, and pressing a sheet of baking paper onto the surface before you put the lid on reduces the air that gets in. Stir the ice cream once or twice in the first hour if you want an even texture, although this step is optional.

Sweetened condensed milk plays two roles here. It sweetens the cream without grit, and its thick, sugary base keeps the ice cream soft enough to scoop after freezing. Plain sugar would crystallise and make the texture grainy, which is why the recipe uses condensed milk rather than sugar.

Take the container out of the freezer about five minutes before scooping. A little softening makes the scoops smoother and stops the outer layer from breaking. Homemade mango ice cream is best eaten within a couple of weeks, when the flavour is still bright.

Hapus ice cream is also a good way to use a glut of ripe fruit. Freeze the pulp in an ice tray if you cannot make the full batch on the day, then thaw the cubes and fold them into the cream when you are ready. The colour and flavour hold up well.

Serve in cones, in small glasses with a little chopped pistachio, or between two cookies for a quick sandwich. A spoon of mango pulp drizzled over each scoop adds colour and a fresher taste at the table.

People also ask

How do you make mango ice cream without an ice cream machine?

Whip one cup of very cold cream to soft peaks, fold in half a cup of sweetened condensed milk and a cup of chilled Alphonso mango pulp, then freeze the mixture in a lidded container for at least six hours. No machine is needed because the whipped cream traps air and keeps the ice cream smooth.

How long does homemade mango ice cream last?

Homemade mango ice cream is best eaten within a couple of weeks. Keep it in an airtight container at the back of the freezer, away from the door, and let it soften for a few minutes before scooping. Over time the flavour fades and ice crystals form, so a shorter storage time gives a better result.

Can I use Alphonso mango pulp for ice cream?

Yes. Ripe Alphonso pulp works well because it is rich and smooth. A tin of Alphonso Mango Pulp is available all year, so you can make hapus ice cream outside the fresh fruit season. Chill the pulp before folding it into the cream so the mixture stays cold.

Which mango is best for ice cream?

Alphonso is a strong choice for ice cream because its pulp is creamy and fragrant, with a clear mango flavour. The fruit should be fully ripe. Other varieties can also be used, but the colour and taste will differ, so taste the pulp before you measure it.
