What Is Aam Hapus?

Aam hapus is the Hindi and Marathi name for the Alphonso mango. It is also called aapus aam, aapus mango, or alfanjo mango in different regions. The fruit grows exclusively in the laterite-rich soil of Konkan, Maharashtra — primarily Ratnagiri and Devgad talukas.

Prashant Powle personally sources from 48 coastal villages of Ratnagiri and Devgad, selecting trees only at elevations where the sea breeze, red laterite soil, and low humidity combine to produce fruit with 20–24 Brix natural sugar. No orchard outside this zone replicates that profile.

When Is Aam Hapus in Season?

The season runs from February to June (the 2027 season starts on 1 February 2027). March fruit exists but is green and flavourless. July onwards, the trees are bare. If a seller offers hapus in August, the fruit is not Alphonso — or it has been stored in controlled atmosphere for months.

What Is the Brix Level of Devgad Alphonso?

Devgad hapus measures 18 to 24 Brix at peak ripeness. Ratnagiri hapus measures 18 to 24 Brix. Both exceed the Brix of most other Indian mango varieties. High Brix means the pulp needs no added sugar in aamras or ice cream.

Hapus Ice Cream Recipe

Hapus ice cream made from fresh aam hapus Alphonso mango pulp

Hapus ice cream is the best use of a box of overripe aam hapus. The 18 to 24 Brix sweetness of Devgad hapus means you reduce sugar by half. The result is a dessert that tastes like concentrated summer.

Nothing tastes better than homemade hapus ice cream with fresh mango pulp. The rich, creamy texture comes from the fruit itself — not from additives or essence. It is smooth, naturally saffron-coloured, and carries the signature floral note that separates genuine hapus from every other variety.

Ingredients

  • Milk — 2.5 cups (250 ml each)
  • Aam hapus puree — 2.5 tbsp (or more to taste)
  • Sugar — 1 cup (reduce to ½ cup if using Devgad hapus at 22+ Brix)
  • Green cardamom (crushed) — 4 to 5 pods
  • Saffron — 1 thread, soaked in warm milk
  • Pistachios — 12 to 15, roughly chopped
  • Almond puree — 2 to 3 tbsp
  • Rice flour — 2.5 to 3 tbsp

Method

  1. Heat saffron and milk together in a heavy pan on low flame for 15 minutes. Do not boil.
  2. Add sugar. Stir until dissolved.
  3. Mix rice flour with 3 tbsp cold milk to make a slurry. Pour into the saffron milk.
  4. Stir continuously. No lumps allowed.
  5. Cook on low flame until the mixture thickens to a custard consistency.
  6. Turn off the flame. Fold in almond puree. Cool to room temperature.
  7. Add aam hapus puree and chopped pistachios. Mix well.
  8. Pour into moulds or a freezer-safe container.
  9. Freeze for 10 hours minimum.
  10. Serve cold. No churning machine needed.

Make this recipe in May when hapus is at peak Brix. The fruit does all the work.

What Makes Alphonso Ice Cream Different from Regular Mango Ice Cream?

Alphonso mango ice cream made from GI-tagged aam hapus — creamy saffron colour, no artificial flavour

Regular mango ice cream uses Totapuri or Kesar pulp concentrate, often with added colour and mango essence. Alphonso ice cream uses only hapus pulp. The saffron-gold colour is natural. The flavour is floral, not sharp. No essence can replicate the terpene profile of a tree-ripened Devgad hapus from a village like Phansole or Kelus.

Natural Ripening — No Carbide

Every aam hapus box from AlphonsoMango.in ripens on a hay bed. The fruit is harvested mature-green and laid on paddy straw for 3 to 5 days. Ethylene released by the straw triggers even ripening. The skin turns golden. The pulp softens uniformly from tip to shoulder.

Carbide-ripened fruit looks golden on day one but tastes chalky. The skin ripens faster than the pulp. You can detect it by pressing the shoulder — carbide fruit stays hard there even when the cheeks are soft.

We do not use carbide. This is verifiable: FSSAI 10020022011783 covers our food safety compliance, and APEDA 225579 governs our export certification. Both require carbide-free handling.

Nutrition

What Nutrients Does Aam Hapus Contain?

One 200g serving of aam hapus provides approximately:

  • Vitamin C — 57 mg (63% RDA)
  • Vitamin A — 1,082 IU
  • Folate — 43 mcg
  • Potassium — 257 mg
  • Dietary fibre — 3 g
  • Natural sugars — 24 g (no refined sugar added)
  • Calories — 135 kcal

The high Brix of hapus means the natural sugar delivers flavour without the caloric load of added sweeteners. Use aam hapus pulp in ice cream and you reduce total sugar addition by 40–50%.

How to Spot Authentic Hapus

What Does GI No. 139 Mean for Aam Hapus?

GI No. 139 is the Geographical Indication registration for Alphonso mango (hapus) from Ratnagiri and Devgad. Registry certificate number is 4163, dated 16 October 2019. Only authorised users can label fruit as GI-certified hapus. AlphonsoMango.in holds Authorisation AU/5974/GI/139/260 under this GI.

If a seller cannot cite a GI authorisation number, their product is not certified hapus. It may be a different variety or a different origin labelled as hapus.
