What Is Aapus Mango?

"Aapus" is the Marathi and Konkani name for Alphonso mango — what most of the country calls Hapus, and what the rest of the world calls Alphonso. The name traces to Afonso de Albuquerque, the 16th-century Portuguese governor who is credited with grafting the variety in Goa. Konkan farmers have grown it ever since, and the fruit shaped by the laterite soil of Ratnagiri district tastes unlike anything grafted elsewhere — that 23–26 °Bx sweetness with almost no fibre in the flesh is specific to this geography.

Why does aapus taste different from other mango varieties?

The laterite and red basalt soil of the Konkan coast drains fast, keeps roots slightly stressed, and concentrates sugars in the fruit. Ratnagiri gets the right ratio of sea breeze and heat between March and May — temperatures between 30 °C and 38 °C push sugar accumulation without scorching the skin. Mangoes grown on flat alluvial land, even with the same grafted rootstock, do not reach those Brix numbers. We tested fruit from our Velas village trees against market "Alphonso" from a flatland orchard: our fruit read 25.2 °Bx, the comparison lot read 18.4 °Bx. That gap is not branding — it's soil and altitude.

What does alfanso mango mean?

"Alfanso" is a common phonetic spelling of Alphonso, used frequently in searches from buyers in Gujarat, Rajasthan and parts of the Middle East. It refers to the same variety — aapus, hapus, Alphonso, alfanso are all the same fruit. GI No. 139 covers all of them when the fruit is grown within the certified Ratnagiri or Devgad zones.

Panna cotta means "cooked cream" in Italian. Our version replaces vanilla with Alphonso pulp — and the result is closer to aamras set in cream than anything you'd find in a Milan trattoria. My wife started making this for the kids during season, then started making it year-round using frozen Alphonso pulp we keep in stock. The colour alone — deep saffron from a 25 °Bx Ratnagiri aapus — is enough reason to make it.

One practical note: gelatin gives the cleanest set. For a vegan version, agar-agar at 1 g per 100 ml works, but the texture is slightly firmer and less silky. Either way, the mango flavour from a ripe aapus carries through the cream without needing extra sugar.

Mango Panna Cotta Recipe

Ingredients (serves 4)

  • 250 ml fresh cream (35% fat)
  • 150 ml whole milk
  • 3 tbsp caster sugar (reduce to 2 tbsp if your aapus is above 24 °Bx)
  • 2 tsp gelatin powder (or 2 g agar-agar for vegan)
  • 3 tbsp cold water (to bloom gelatin)
  • 200 g Alphonso or Kesar mango puree (fresh or frozen)
  • ½ tsp cardamom powder (optional — our Indian twist)
  • Fresh mango chunks and mint for garnish

Method

  1. Bloom gelatin in cold water for 5 minutes.
  2. Heat cream, milk and sugar in a saucepan on low flame until sugar dissolves. Do not boil.
  3. Remove from heat. Stir in bloomed gelatin until fully dissolved.
  4. Mix in mango puree and cardamom. Blend smooth if needed.
  5. Pour into glasses or ramekins. Refrigerate for 4–6 hours minimum.
  6. Top with fresh aapus chunks before serving.

The key step most home cooks miss: do not add the mango puree to hot cream. Temperatures above 65 °C dull the volatile esters responsible for that aapus fragrance. Add puree after the pan comes off the flame.

Can I use frozen mango pulp for panna cotta?

Yes. Our frozen Alphonso pulp — processed during the April–May peak from Ratnagiri fruit — retains enough of the original esters to produce a good result. Thaw overnight in the refrigerator and use at a 1:1 ratio with fresh puree. The Brix drops slightly in frozen pulp (typically 21–23 °Bx post-thaw), so taste before reducing sugar.

How We Ripen Aapus — No Carbide, Ever

Every aapus mango we dispatch is ripened on hay beds — the traditional Konkan method where fruit rests on dried grass in shaded, ventilated rooms for 3–5 days after harvest. Ethylene released naturally by the fruit itself triggers ripening. This is the only method that produces the characteristic saffron skin with green shoulders and the honey-sweet pulp without chemical aftertaste. Carbide-ripened fruit turns yellow uniformly and quickly, but the flesh stays starchy near the seed for another day or two — you can taste the difference immediately if you've eaten a genuine aapus from a Ratnagiri orchard.

FSSAI regulations prohibit calcium carbide use (Regulation 2.3.5 of the Food Safety and Standards Regulations, 2011). We comply — and we have the FSSAI licence 10020022011783 to confirm it.

Season, Storage and Honest Limits

Aapus mango is a strictly seasonal fruit. The window runs from mid-March to the end of May, occasionally stretching to mid-June in a cool year. By July, trees in Ratnagiri and Devgad are bare. We do not sell fresh aapus from July through February — anyone offering "Alphonso" in those months is selling a different variety or fruit from outside the GI zone.

Once you receive your dozen, store unripe fruit at room temperature, away from direct sunlight. Ripe fruit keeps 2–3 days at room temperature or up to 5 days in the refrigerator (though refrigeration slightly mutes the fragrance). Do not freeze whole fruit — freeze the pulp instead.

When exactly does the aapus mango season start in 2025?

What is the Brix level of Ratnagiri Alphonso aapus mango?

A fully ripe Ratnagiri Hapus aapus measures 23–26 °Bx on a refractometer. For comparison, a standard commercial mango sold in Indian supermarkets sits at 14–18 °Bx. Brix measures dissolved sugars, so a 25 °Bx aapus carries roughly 60–70% more natural sugar by weight than a supermarket fruit. That is why the dessert recipes above need less added sugar when you use a genuine Ratnagiri aapus.
