How long does it take for a mango to ripen? - AlphonsoMango.in

How long does it take for a mango to ripen? Most mangoes ripen in roughly 3 to 7 days, depending on variety, maturity and room temperature. Alphonso usually takes 5 to 6 days and Kesar 4 to 5, while Pairi ripens a little faster.

How long does it take for a mango to ripen, by variety?

The days below count from the day a mature mango is harvested, with the fruit kept in a normal room. They are typical ranges, not a stopwatch. A cool kitchen or a very firm fruit will take longer, and a warm room will take less.

Mango Usual days to ripen What to expect
Pairi (Payari) A little faster than Alphonso Usually the first of the three to soften and sweeten.
Kesar 4 to 5 days Skin turns yellow-orange with a strong aroma.
Alphonso (Hapus) 5 to 6 days Golden-yellow skin, saffron-coloured flesh, a sweet smell at the stem end.

If you are buying Alphonso, you can see the two main sources on our Ratnagiri Alphonso and Devgad Alphonso pages. Both are the same variety, so the ripening time is the same. For the other types in the table, see Kesar and Pairi.

What changes how long a mango takes to ripen

Ripening is a change inside the fruit. Starch turns to sugar, the flesh softens and the colour moves from green to yellow or gold. The mango releases a natural gas called ethylene that drives the process. Five things change the speed.

  • Maturity at harvest. A mango picked fully mature, but not yet ripe, ripens evenly. A fruit picked too early may shrivel before it sweetens.
  • Room temperature. Warmth speeds it up. A cold room or a fridge slows it down and can stop proper ripening.
  • Variety. Pairi is quick, Alphonso is slower, as the table shows.
  • Air and company. A paper bag or a bowl with other ripe fruit holds in ethylene and speeds things up.
  • Handling. Bruised or squeezed fruit ripens unevenly, so do not press green mangoes to test them.

How we ripen Alphonso mangoes

Our Alphonso mangoes are hand-picked at Brahma Muhurta, the pre-dawn hour, when they are mature. They are sorted for quality and then ripened naturally. We do not use carbide. Our Alphonso mangoes are ripened naturally on hay beds. If you want to know how to check any seller's fruit, our guide to identifying carbide-ripened mangoes lists what to ask.

If a box arrives firm, keep the fruit at room temperature out of direct sun and check it daily using the signs below. Check your PIN code at checkout for delivery timing.

Hay-ripened vs carbide-ripened mangoes: what differs

Naturally hay-ripened mango compared with calcium-carbide-ripened mango
Point Naturally ripened on hay beds Ripened with calcium carbide
Ripening medium Mature fruit is laid on hay beds and ripens by itself over several days. Calcium carbide produces acetylene gas, which is used to force ripening.
Legality in India Allowed. Prohibited. Regulation 2.3.5 of the Food Safety and Standards (Prohibition and Restrictions on Sales) Regulations, 2011 bars selling fruit ripened with acetylene (carbide) gas.
Skin colour (rough clue, not proof) Often uneven: green, gold and a blush can sit together on one fruit. Colour alone cannot show how a fruit was ripened; an even bright yellow skin is only a rough clue.
Aroma (rough clue, not proof) A sweet fruity smell, strongest near the stalk, builds as the fruit ripens. Aroma can be weak when ripening is forced; this is a rough clue only.
Taste and health note Sweet with a little acidity, soft flesh. The Ministry of Health and Family Welfare (PIB, 18 May 2024) lists dizziness, irritation, difficulty in swallowing and vomiting among effects linked to carbide residues.

No home test, including the water or bucket test, proves how a mango was ripened. Ask any seller how the fruit was ripened.

How to ripen a mango faster at home

You can often shorten the wait to roughly 2 to 3 days with a simple trick that traps the fruit's own ethylene.

  1. Put the mangoes in a paper bag, not a sealed plastic bag. Leave the top loosely folded so a little air still moves.
  2. Add a ripe banana or apple if you have one. These give off more ethylene.
  3. Some people also bury the fruit in a bowl of uncooked rice. The grain holds in the gas and the warmth, and it is a common home method.
  4. Keep the bag in a warm, dry spot and check once a day.

Do not put unripe mangoes in the fridge. Cold stops the sugar from developing. For more methods, read our full guide on ripening mangoes at home.

Signs a mango is ripe

Do not rely on colour alone, because some mangoes stay partly green when ripe. Use all of these together.

  • Gentle squeeze. A ripe mango gives slightly under light pressure. It should feel heavy for its size.
  • Smell. A sweet aroma at the stem end is the most reliable sign.
  • Colour. Alphonso turns golden-yellow, often with a blush near the shoulder. Inside, the flesh is a saffron-gold, which starts near the seed (koy in Marathi) and spreads outward.
  • Shoulders. In a mature mango the area around the stem looks full, and the stem end sits slightly inside the shoulder.
  • Skin. A little wrinkling means very ripe. Eat the fruit that day or the next.

Black patches or a sour smell mean the fruit is past its best. If a mango smells fermented, with a sharp alcohol-like note, it has gone too far and is better not eaten. Fruit that is ripe on the outside but still hard near the seed was probably picked a little early, and it may taste less sweet than a fully mature one.

Green mango and time on the tree

A mango that is still fully green and firm will take longer than one that has started to colour, so allow extra days if you need the fruit for a particular date. Mature green fruit is normal and should not be squeezed to test it.

On the tree, Alphonso takes roughly 100 to 120 days to grow to maturity on the Konkan coast. Other varieties and other countries differ with climate, so a mango from a cooler region can take a different number of days. The harvest season for Alphonso runs about February to June, with the best supply from March to May. Our 2027 season opens on 1 February 2027. Outside the season fresh Alphonso is not sold, but Alphonso pulp tins are available all year.

What to do once it ripens

Once the mango is ripe, the clock starts again, so it helps to plan how you will use it. Ripe fruit is best eaten in a day or two, and a plan avoids waste when several ripen together.

  • Eat it within a day or two, or move it to the fridge to slow things down for a few more days.
  • Bring chilled fruit back to room temperature for a better aroma before eating.
  • Cut ripe fruit into cubes and keep it in an airtight container in the fridge, or freeze it for later.
  • Watch for black spots. They show the fruit is starting to go over.

People also ask

How many days does a mango take to ripen?

Most mangoes need roughly 3 to 7 days after harvest at room temperature, depending on variety and maturity. Alphonso usually takes 5 to 6 days and Kesar 4 to 5 days, while Pairi ripens a little faster than Alphonso. A warm room speeds this up and a cold one slows it.

How can I ripen a mango overnight?

There is no safe way to ripen a mango fully overnight. A loosely folded paper bag with a ripe banana can bring a firm mango to ripeness in roughly 2 to 3 days. Avoid shortcuts such as chemicals, and do not put unripe fruit in the fridge, because cold stops the sugar from developing.

Do mangoes ripen after they are picked?

Yes. Mangoes keep ripening after harvest as long as they were picked mature. Starch turns to sugar and the flesh softens. A mango picked far too early may shrivel or stay sour instead of ripening well, so maturity at harvest matters more than anything you do later.

How do I know when a mango is ripe?

Press gently and look for a slight give. Smell the stem end for a sweet aroma, and check that the fruit feels heavy for its size. Alphonso turns golden-yellow and its flesh is saffron-gold. Black spots or a sour smell mean it is past its best.
