Alphonso in Satara: the fruit on the other side of the ghats
Satara sits on the Deccan side of the Sahyadri, the range that separates the Maharashtra plateau from the Konkan coast. Alphonso, known locally as Hapus, is grown on the coastal side, in Ratnagiri district and Devgad taluka of Sindhudurg. So when a family in Satara wants Alphonso from its home coast, the fruit has to cross the ghats to reach them.

Hapus, amba and Alphonso
In Marathi homes the mango is called amba or aamba, and the Alphonso is called Hapus. Wikipedia says the variety is named after Afonso de Albuquerque, and puts a fruit at about 150 to 300 g with a rich, creamy, non-fibrous pulp. In Satara you may hear all three words in one conversation, and they all point to the same fruit.

Where our Alphonso comes from
Ratnagiri is a district on the Konkan coast of Maharashtra. Devgad is a taluka in Sindhudurg district. We source across 48 villages of the belt. Fruit is hand-harvested with a zela pole fitted with a catching net, at Brahma Muhurta, the pre-dawn hour, for all our Alphonso.

Ripening, carbide and what to ask
Wikipedia notes that Alphonso takes about 15 days from harvest to ripening, so a box can hold fruit at different stages. Keep unripe fruit at room temperature, away from direct sun, and check it daily. A sweet aroma at the stalk end and a slight give under the thumb mean a fruit is ready. Do not refrigerate fruit that is still firm.
Selling fruit ripened with calcium carbide gas is prohibited in India under Regulation 2.3.5 of the Food Safety and Standards (Prohibition and Restrictions on Sales) Regulations, 2011. We do not use carbide. Our Alphonso mangoes are ripened naturally on hay beds. When you buy from any seller, ask where the fruit grew, what grade it is, how it was ripened and what happens if the box is damaged. A bucket-of-water test is only a rough clue, not proof. Cooking and serving ideas for ripe Hapus
Ripe Alphonso is at its best fresh, sliced or cut into cubes. The pulp also makes aamras, and it works in milkshakes and in desserts with curd or ice cream. If a box arrives with several fruits at the same stage, plan across the same weekend so nothing is wasted. Outside the season, the pulp tin gives you the flavour for aamras without waiting for fresh fruit.
It helps to decide the quantity before you order. A dozen weighs roughly 1.8 to 3.3 kg depending on grade, so a large-grade dozen is a big box for a small household, and a small-grade dozen is a modest one. Count how many people will eat, how many days you want the fruit to last, and whether you are sending some to relatives, and then pick the grade and the number of dozens to match.
