What Is Hay-Bed Ripening?
Freshly harvested Alphonso is laid in beds of dry paddy hay at the packing house. The hay insulates the fruit, regulates temperature, and allows natural ethylene — the gas the mango itself produces — to trigger ripening uniformly. This takes 3–5 days depending on ambient temperature.
