Hapus: The Aam to Die For!

No other fruit is as delicious as a mango. In India, you can find loads of variety of this fruit. It ranges from Dussehri from the north to Neelam from the south. But there's one variety that has successfully stolen everybody's hearts. It's the alphonso mango from Konkan.

Also known as the Hapus aam, this variant is the most sought variety of mangoes because of its rich aroma, beautiful orange-yellow skin, and dense, creamy, juicy, and incredibly sweet taste.

It is of medium size and weighs around 150 to 300 grams. A raw Alphonso is hard to touch and has a dark green hue. A ripe one is soft to touch, has a beautiful orange-yellow hue, and a sweet, strong aroma. Even one ripe Hapus is enough to fill the entire room with its enticing fragrance.

Did you know that this delicacy is an outcome of colonialism? Aam was brought to India by a Portuguese military general who taught Indians the art of grafting plants! Many people have tried to grow hapus across India, but only Konkan produces the best of Hapus.

This is because the taste, texture, and aroma of aam are influenced by the climate and soil of the region it is grown in.Konkan's volcanic soil, topography, and hot yet humid climate made it the producer of the tastiest Hapus mango.

Devgad and Ratnagiri Hapus

Although Alphonso is the best of all aams, the ones grown in Devgad and Ratnagiri are much more special. These two districts produce the most premium quality Hapus. The mangoes grown here are of export quality. Ratnagiri Alphonso is known for its sweeter pulp, whereas the Devgad variety is much juicier.

It has thin skin. Thus, you get more pulp in Devgad mango. Also, this pulp is tastier and juicer than all the other mangoes. Like Kolhapuri chappals, Ratnagiri and Devgad Hapus are awarded a GI tag. A GI tag is a hallmark of excellent quality.

It is awarded to a product made exclusively in a region and grants intellectual rights to the producers in that region.

How to use Alphonso mango?

Using a mango, let alone an Alphonso is very easy. Just wash the fruit, make a tiny cut on the top, squeeze the gum out, and have it! You can chop the fruit too. Hold the mango horizontally across the board and chop the stem off.

Wash the fruit, grab a knife and a chopping board, and you're ready to begin. Hold the fruit vertically across the board and cut a few centimeters away from the center. That way, you can cut easily and not hit the seed.

You can then dice the fruit or chop it into smaller pieces. Add these pieces to your salads, milkshakes, yogurts, or lassi. You can make a fresh pickle-like salad with raw aam or Kairi. Just chop the Kairi the same way you'd chop an aam.

Add some red chili powder, salt, and jaggery to it. You can skip jaggery if you're a fan of spice. You can make a delicious mango milkshake. You'll need a chopped aam, some milk, vanilla ice cream, some sugar, and ice cubes. Here's how In a blender, pour your milk, aam, and ice cubes.

This should suffice but if you prefer something sweeter, add sugar.Blend all your ingredients.Pour your milkshake out in a glass with some ice cubes.Add a scoop of vanilla ice cream.Voila! Your milkshake is ready to be devoured!
