Bhubaneswar has no shortage of mangoes in the market, and Odisha grows plenty of its own. Alphonso is different: it is a Konkan variety, grown on the western coast of Maharashtra, on the opposite side of India from the Bay of Bengal. Why Alphonso comes from the Konkan
Alphonso, also called Hapus or Hafoos, is named after Afonso de Albuquerque. Ratnagiri is a district and Devgad is a taluka in Sindhudurg district, both on the Konkan coast. We source from 48 villages across the Ratnagiri and Devgad belt and sell the fruit as Ratnagiri Alphonso and Devgad Alphonso. Both are the same variety. We do not rank one origin above the other, so choose by size, grade and budget.
A typical Alphonso weighs between 150 and 300 g, and the pulp is rich, creamy and non-fibrous. The fruit is harvested by hand with a zela pole fitted with a catching net, and all our Alphonso is harvested at Brahma Muhurta, the pre-dawn hour.

Ripening in Bhubaneswar's climate
Bhubaneswar is hot and humid for much of the Alphonso season, and that changes how you handle the box. Alphonso takes about 15 days from harvest to full ripeness, so fruit that arrives firm still has days to go.
- Unpack the same day and spread the mangoes in a single layer on clean, dry paper.
- Keep them in shade, indoors. A sunny balcony speeds ripening unevenly and can spoil the skin.
- Do not fridge unripe fruit. Cold stops ripening. Chill only ripe fruit you cannot finish.
- Check each morning. A ripe Alphonso smells sweet near the stalk and gives slightly under a gentle press. Humid weather moves fruit from ripe to overripe quickly, so eat it within a few days.

Ripening and credentials
We do not use carbide. Our Alphonso mangoes are ripened naturally on hay beds. Selling fruit ripened with carbide gas is prohibited in India under Regulation 2.3.5 of the Food Safety and Standards (Prohibition and Restrictions on Sales) Regulations, 2011.
