Amazing Mango Halwa recipe at home - AlphonsoMango.in

Mango halwa made with ripe Alphonso pulp, ghee, sugar and cardamom takes about 25 minutes on the stove. This page gives the recipe, cashew garnish options, sugar tips and buying advice for a glossy, golden halwa that suits family meals.

What mango halwa is

Mango halwa is a rich Indian dessert in which ripe mango pulp is cooked down with ghee and sugar until it turns glossy and pulls away from the pan. It is soft and spoonable, which sets it apart from mango katli, a firmer sweet cut into slices. Cardamom gives it its warm fragrance, and cashews fried in ghee add crunch on top.

Good halwa depends on two things: ripe Alphonso pulp and good garnish nuts. We sell Alphonso by the dozen from the Ratnagiri and Devgad belt on the Konkan coast, and we also sell the cashews used for garnish. This page gives one recipe for four servings.

Why Alphonso suits mango halwa

Mango halwa recipe made with fresh Alphonso mango pulp, ghee, cardamom and cashew garnish

Alphonso pulp is described on Wikipedia as rich, creamy and non-fibrous. Those qualities give halwa a smooth, even texture, with no stringy pieces to break up in the pan. Alphonso is GI-tagged in India under GI No. 139, and our Ratnagiri fruit is covered by GI Authorised User certificate AU/5974/GI/139/260 (GI No. 139). Our Devgad fruit is covered by certificate AU/6932.

Ratnagiri is a district on the Konkan coast and Devgad is a taluka in Sindhudurg district. They are the same variety, and we do not rank one above the other for halwa. Choose by the fruit size you need and check the Ratnagiri Alphonso Mango page or the Devgad Alphonso Mango page for the current price.

Alphonso is naturally sweet, so you usually need less sugar than you would with a fibrous variety. Start with three tablespoons and add more only after tasting the pulp in the pan.

Mango halwa recipe (serves 4)

Mango halwa ingredients: Alphonso pulp, ghee, cardamom, saffron and whole cashew nuts

Ingredients

  • 2 cups ripe Alphonso mango pulp (roughly 3 to 4 medium fruits, 180 to 225 g each)
  • 3 tablespoons pure ghee
  • 3 to 4 tablespoons sugar (taste as you go)
  • 4 to 5 green cardamom pods, seeds crushed
  • 8 to 10 whole cashew kernels (W240 for garnish)
  • A pinch of saffron soaked in 2 tablespoons warm milk (optional)

Method (about 25 minutes)

  1. Heat a heavy-bottomed pan on medium. Add 1 tablespoon ghee and fry the cashews until golden. Set aside.
  2. Add the remaining ghee to the same pan. Pour in the mango pulp and stir continuously on medium heat.
  3. Let the pulp bubble and thicken for about 10 to 12 minutes, until it pulls away from the sides of the pan.
  4. Add the sugar and stir for about 5 minutes, until it dissolves and the halwa turns glossy.
  5. Add the crushed cardamom. Pour in the saffron milk if using, and stir for 2 more minutes.
  6. Remove from the heat, top with the fried cashews and serve warm.

Fresh pulp has more free water than canned pulp, so you stir for longer, and the pulp can take on a deeper, caramel-like note in the ghee. Use a heavy pan and stir steadily so the bottom does not catch.

Cashews for garnish and for the halwa

W240 premium large whole cashew nuts for mango halwa garnish from AlphonsoMango.in

Whole cashew kernels fried in ghee are the usual garnish. Our W240 cashew nuts are larger kernels, so they hold their shape in the ghee and do not crumble into the halwa. Our W320 cashew nuts are a regular size and a good everyday choice for larger batches.

Roast the cashews gently in ghee until they turn golden, and watch them closely, because they darken quickly at the end. Cashews ship year-round, so you can keep a stock for halwa while Alphonso is out of season.

Troubleshooting a halwa that will not thicken

Hapus Alphonso mango halwa with a golden colour, made with Ratnagiri and Devgad pulp
  • It stays runny. Keep stirring on medium heat for a few more minutes. The pulp thickens as the water cooks off.
  • It sticks to the pan. Lower the heat and stir more often. A heavy-bottomed pan spreads the heat evenly and helps prevent catching.
  • It tastes flat. Add a small pinch of crushed cardamom at the end, then taste again before you add any more sugar.

Make the halwa in a pan large enough that the pulp can bubble without spilling. A smaller batch is easier to control, and you can always make a second batch for a bigger gathering.

Season and off-season halwa

Alphonso is harvested from about February to June, with the best supply from March to May. The 2027 season opens on 1 February 2027, and fresh Alphonso is not sold outside the season. Outside it, the Alphonso Mango Pulp Tin is available all year in 850 g and 3.1 kg tins from Rs 590, so you can make halwa at any time of year. Our mango collection shows what is listed on the store.

Delivery and arrival

Orders received before 1 PM are dispatched the same day. We dispatch by Blue Dart, and about 65% of Indian PIN codes get next-day delivery. Check your PIN code at checkout. We do not promise a delivery day for any named city, because the PIN code and the courier route decide it. Choose an address where someone can receive a perishable box.

Report any damage within 24 hours of delivery to support@alphonsomango.in or 8369048029. Lay the fruit in a single layer away from direct sun, and let firm fruit ripen at room temperature before you cook with it.

Ripening and what to ask any seller

We do not use carbide. Our Alphonso mangoes are ripened naturally on hay beds. Calcium carbide is prohibited for ripening fruit in India under Regulation 2.3.5 of the Food Safety and Standards (Prohibition and Restrictions on Sales) Regulations, 2011, and we are an FSSAI-licensed seller. No home test proves how a mango was ripened, and the bucket-of-water test is a rough clue, not proof.

Our Alphonso is ripened on hay beds, not with a forced ripening agent. Before you buy pulp for halwa, ask the seller how the fruit was ripened and whether a GI user certificate number is shown for Alphonso. Our guide to identifying authentic Hapus lists more questions to ask.

People also ask

What is mango halwa made of?

Mango halwa is made from ripe Alphonso mango pulp, ghee, sugar and crushed green cardamom. Many cooks add saffron soaked in warm milk and garnish with whole cashews fried in ghee. Cook the pulp in ghee until it thickens, add the sugar and cardamom, and serve warm.

How long does mango halwa take to make?

Mango halwa takes about 25 minutes from start to finish. The pulp needs about 10 to 12 minutes to thicken, and the sugar needs about 5 minutes to dissolve and turn the halwa glossy. Stir steadily on medium heat so the mixture does not catch on the bottom of the pan.

How much sugar goes in mango halwa?

Start with three tablespoons of sugar for two cups of pulp, then taste and add more only if needed. Alphonso pulp is naturally sweet, so many batches need less sugar than a fibrous variety. The sugar also helps the halwa turn glossy as it cooks.

Which cashews are best for mango halwa?

Whole W240 cashews are large kernels that hold their shape when fried in ghee, so they work well as a garnish. W320 cashews are a regular size and suit larger batches. Fry them gently in ghee until golden, then set them aside before adding the pulp.
