Our repeat-order data from 47,000+ customers shows north India leans Ratnagiri; Mumbai leans Devgad. For cake baking, we find both work well — the difference is in the frosting. Devgad pulp, being denser and sweeter, makes a frosting that sets firmer at room temperature.

Delivery Across India

Alphonso is dispatched at 70–80% ripeness — firm enough for transit, ripening fully within about three days of delivery. The supply chain runs: harvest in Ratnagiri or Devgad → packhouse within roughly 2 hours → air-conditioned vehicle to Mumbai → 24–48 hours of natural hay-bed ripening → courier dispatch. Total harvest-to-dispatch time is 48–72 hours.

Orders placed before 12 noon IST (Monday to Saturday) are dispatched the same day. Delivery takes 1 to 3 days for most PIN codes and 1 to 2 days to most metros, depending on your PIN code. Fresh mangoes are delivered by Blue Dart to more than 4,700 PIN codes.

Every mango ships in a 5-ply corrugated box with a 12-slot partition, a hay-bed base, and individual foam-net sleeves. The foam net prevents the lenticel bruising and latex cross-contamination that can mark Alphonso skin during a 20-hour transit. We do not dispatch fresh Alphonso July to January — if you are reading this outside the February–June window, order from the mango pulp range instead.

What Is Mango Cake?

Mango cake is a baked or no-bake dessert where ripe mango pulp replaces or supplements the primary liquid in a standard cake formula. The fruit does three jobs at once: it sweetens the batter, colours it a deep saffron-orange, and gives the crumb a dense, moist texture that plain sponge cannot match.

Styles range from a simple eggless sponge — flour, condensed milk, oil, mango puree, baking powder — to layered cakes with mango cream between each tier, to no-bake mango cheesecakes held firm by gelatine or agar. The eggless version using condensed milk is the most searched variation in India, and for good reason: it takes about 25 minutes in a standard oven and needs no stand mixer.

Mango Cake Variations Worth Knowing

Mango chiffon cake — beaten egg whites folded into a mango-oil batter. Light, spring-back crumb. Best when the mango is very ripe so the pulp thins slightly.

Mango layer cake — two or three sponge layers sandwiched with mango whipped cream or mango curd. The Alphonso variety holds its colour through whipping, which matters for presentation.

Mango mousse cake — a biscuit or sponge base topped with set mango mousse. No baking required for the mousse layer. Devgad Alphonso pulp (typically at the upper end of the 18–24° Brix range) gives this version an intensity that canned pulp cannot replicate.

Why Alphonso Makes the Best Mango Cake

Most Indian bakeries use canned mango pulp. That pulp is fine for volume production but it is cooked, preservative-treated, and standardised to a mid-range Brix. Fresh Alphonso from Ratnagiri or Devgad hits 18–24° Brix at ripeness. Fruit sourced from villages like Pawas, Golap and Nachane in Ratnagiri district, or Devgad and Jamsande in Sindhudurg, carries a particular floral note — locals call it the "saffron" character — that survives moderate oven heat up to about 170°C.

Prashant Powle, who founded AlphonsoMango.in in 2017, sources from 48 coastal villages of Ratnagiri and Devgad. Every fruit is individually weighed, graded, and scanned by an AI/ML machine that checks for spongy tissue and external deformities before packing. A Medium-grade fruit (180–225 g) yields roughly 120–150 g of clean pulp — enough for one 6-inch mango cake layer with a little left for the frosting.

We assumed early on that any ripe Alphonso would taste the same in batter. The grading data proved otherwise. Spongy-tissue fruit — rejected at the scanning stage — produces watery pulp that breaks batter emulsion. Clean, dense pulp from sound fruit gives a batter that stays emulsified and rises evenly. This is why machine grading before packing matters as much for your kitchen as it does for eating out of hand.

Alphonso Mango Cake Recipe

Eggless Mango Cake (Oven, 25 minutes)

Ingredients

  • 1½ cups all-purpose flour
  • 1 cup fresh Alphonso mango pulp (about 2 Medium-grade fruits, 180–225 g each)
  • ½ cup condensed milk
  • ¼ cup neutral oil (or melted butter)
  • 1 tsp baking powder
  • ½ tsp baking soda
  • 1 tbsp ground roasted flax seeds mixed with 3 tbsp water (egg replacer, optional — see Roasted Flax Seeds)
  • ¼ tsp cardamom powder
  • Pinch of salt

Method

  1. Preheat oven to 170°C. Grease and line a 6-inch round tin.
  2. Blend the Alphonso pulp until smooth. It will be naturally thick — do not add water.
  3. Mix mango pulp, condensed milk, oil and flax-egg in one bowl.
  4. Sift flour, baking powder, baking soda, cardamom and salt into a second bowl.
  5. Fold wet into dry in two batches. Do not beat — 15 stirs maximum. Over-mixing develops gluten and toughens the crumb.
  6. Pour into the tin. Bake 22–25 minutes. A skewer should come out clean.
  7. Cool completely before frosting.

Frosting suggestion: Whip 200 ml chilled heavy cream to soft peaks. Fold in 3 tbsp fresh Alphonso pulp. The cream will turn a deep amber. Frost immediately and refrigerate the finished cake.

No-Bake Mango Slab Cake

Layer Marie biscuits in a dish. Mix ½ cup Alphonso pulp into 250 ml whipped cream. Spread between and over three biscuit layers. Refrigerate four hours. The biscuits absorb the mango cream and soften to a cake-like texture. Serves 6. Total time: 15 minutes active, 4 hours passive.

Mango Cheesecake Variation

A no-bake mango cheesecake needs a firm set. Beat 200 g cream cheese with 3 tbsp icing sugar. Fold in ½ cup Alphonso pulp. Dissolve 1½ tsp gelatine in 2 tbsp warm water, cool to room temperature, then fold into the mixture. Pour over a crushed digestive biscuit base pressed into a 7-inch springform tin. Refrigerate overnight — at least 8 hours. Unmould and spoon fresh Alphonso pulp over the top just before serving.

Devgad Alphonso works better here than Ratnagiri for the filling because its denser pulp does not thin the cream cheese as much. Use Ratnagiri for the topping, where the brighter colour shows.

Storage and Ripening Tips

Fruit arrives at 70–80% ripeness. Keep it at room temperature for 2–3 days until fully ripe — skin should be mostly yellow with a saffron blush, fruit yielding slightly to thumb pressure. Do not refrigerate unripe Alphonso. Once fully ripe, refrigerate and use within 2 days. Cold pulp is easier to blend without aeration.

For baking, pulp extracted from cold fruit blends into batter more smoothly than room-temperature pulp. Chill the peeled fruit for 30 minutes before blending if you want a denser batter consistency.

How Long Does Mango Cake Last?

An Alphonso mango cake with fresh cream frosting lasts 2 days in the refrigerator. An unfrosted sponge stays moist for 3 days covered at room temperature during the mango season months (February–June), when ambient humidity is moderate. Do not freeze a frosted cake — the cream separates on thawing.

Mango Season and Availability

Alphonso is available from February to June, with peak quality in March, April and May. We do not sell fresh Alphonso July to January. This is not a policy — it is the biology of the tree. Alphonso is a strong alternate bearer; forcing off-season fruit damages the next year's crop, which is why every orchard in Devgad and Ratnagiri observes the natural cycle.

If you are outside this window and want to make mango cake, Alphonso mango pulp is available year-round on the site — independently tested by Envirocare Labs, Thane (NABL accredited, certificate TC-8284), all residues within Codex maximum residue limits.

People Also Ask

What makes Mango Cake so special?

Mango cake is special because ripe mango pulp does three jobs at once: it sweetens the batter, colours it a deep saffron-orange, and gives the crumb a moist density that plain sponge cannot match. Fresh Alphonso from Ratnagiri or Devgad hits 18–24° Brix at full ripeness, so you need far less added sugar than any bakery recipe assumes.

That floral "saffron" character — particular to villages like Pawas and Golap in Ratnagiri — survives moderate oven heat up to about 170°C, which canned pulp standardised to a mid-range Brix simply cannot replicate.

How to make a simple Mango Cake?

Blend 200 g of ripe Alphonso pulp with 200 g condensed milk, 100 ml neutral oil, 150 g plain flour, one teaspoon baking powder, and a pinch of salt. Pour into a greased 6-inch tin and bake at 170°C for 25 minutes. No stand mixer needed, and the Alphonso colour holds through baking.

A Medium-grade Alphonso fruit (180–225 g) yields roughly 120–150 g of clean pulp — enough for one cake layer with a little left for frosting.

Can I make Mango Cake using a box mix?

Yes, a box mix works as the base — swap the water or milk the box calls for with fresh Alphonso pulp, gram for gram. Because Alphonso from Ratnagiri or Devgad hits 18–24° Brix at ripeness, the batter will be sweeter and moister than the packet expects, so reduce any added sugar by about one-third.

If you are baking during the February–June season, use pulp from a Medium-grade Alphonso (180–225 g fruit) — one fruit yields roughly 120–150 g of clean pulp, which is enough for a standard 6-inch box-mix cake with a little left for the frosting.

What is Filipino Mango Cake?

Filipino mango cake is a chilled layered dessert built on a soft chiffon or sponge base, filled and frosted with whipped cream folded through ripe mango pulp, and topped with fresh mango slices. It is served cold rather than at room temperature and relies entirely on the mango's natural sweetness and colour for its signature look.

Alphonso pulp at 18–24° Brix holds its deep saffron colour through whipping, making it a strong substitute for the Carabao mangoes traditionally used in the Filipino version.
