Irresistible Mango For Dessert Recipes - AlphonsoMango.in

Mango desserts work best with ripe Alphonso, because its pulp is rich and creamy. This guide covers traditional Indian mango desserts, cold and baked options, toppings, pulp for the off season and how to choose fruit for dessert, with a clear shopping list.

Why Alphonso works well in mango desserts

A dessert is only as good as its fruit. Alphonso is a mango variety from the Konkan coast of Maharashtra, and its pulp is described as rich, creamy and non-fibrous. That texture is what makes it useful for dishes where the mango needs to melt into milk, cream or yoghurt rather than sit in chunks. The same smoothness makes it a good base for both traditional and modern desserts.

Alphonso is sold by the dozen from Ratnagiri and Devgad. Both are the same variety, and we do not claim that one area suits desserts better than the other. The fruit you choose depends on the dessert, the number of people and the form you need, whole fruit for slices or pulp for mixing.

Choosing the right mango for dessert

For a dessert, choose fruit that is ripe and sweet at the stem end, with a soft flesh that gives slightly when pressed. Avoid fruit with a sour smell or with very hard flesh, because it will not blend smoothly. Our guide to ripening Alphonso mangoes at home explains how to bring fruit to the stage you want before you cook with it.

Choosing ripe Alphonso mangoes for dessert

Alphonso fruit generally weighs about 150 to 300 grams each. For a dessert for four, one dozen gives you a generous amount of pulp and slices with some left for eating whole. A dozen weighs roughly 1.8 to 3.3 kilograms depending on grade, so a larger order suits a party or a gathering.

Kesar is a different variety from Gujarat, and it has its own character. It is sold as half-dozen and dozen boxes, and it is not Alphonso. Use it when you want a different mango in the same dessert, and do not describe it as GI-tagged.

Traditional Indian mango desserts

Many traditional Indian desserts use mango because the fruit is at its best in the hot months, when the dessert is most welcome. The three below are the most common, and each has a clear method that suits Alphonso pulp.

  • Amrakhand: a thick, sweetened yoghurt flavoured with mango pulp and often cardamom. It is served chilled. Use strained yoghurt and blend in the pulp until the mixture is smooth.
  • Mango rabri and basundi: milk reduced slowly with sugar, then mixed with mango pulp once it is cold. Our mango rabri recipe and mango basundi recipe give the full method.
  • Aamras: a smooth mango pulp served with puri or as a simple dessert. Our aamras recipe covers the method and the texture to aim for.

Phirni and kheer can also take mango pulp stirred in at the end, once the base is cool. Add the pulp slowly and taste as you go, because the sweetness of the base changes as it cools.

Cold and baked mango desserts

Mango works well in cold desserts that set in the fridge, and most of them can be made the day before a meal. A mango panna cotta uses pulp in place of some of the cream, and a mango mousse folds pulp into whipped cream. Both are served chilled and both suit a warm evening.

For a baked dessert, mango pulp can be used in a cheesecake base or swirled into a batter. Use ripe fruit with a smooth pulp, and reduce the sugar slightly because ripe mango is naturally sweet. Our mango panna cotta recipe, mango mousse recipe and mango cheesecake recipe show the methods step by step.

Keep baked desserts simple. Mango adds moisture, so a cake or a bar may need a little more time in the oven than a plain batter. Check the centre with a skewer and let the dessert cool fully before you slice it.

Toppings and nuts for a mango dessert

A topping adds texture to a soft mango dessert. Whole cashew nuts are a good choice, and our W180 whole cashew nuts suit a topping for a dessert or a plate of fresh slices. Toast them lightly in a dry pan, let them cool and chop them just before serving, so that they stay crisp.

Other good toppings are a little saffron-infused milk, a few cardamom seeds or a spoon of crushed nuts. Add toppings at the last moment, so they keep their texture and colour.

Pulp for dessert outside the season

Fresh Alphonso is harvested from about February to June, with the best supply from March to May. Outside those months fresh fruit is not sold, so pulp is the practical choice for a dessert. Our Alphonso Mango Pulp Tin is available all year and comes in 850 g and 3.1 kg sizes, from Rs 590.

Pulp is sterilised and packed in sealed tins, so it is stable until you open it. Once open, store it covered in the fridge and use it within the time printed on the label. Check the product page for the tin size that suits your dessert.

For a dessert party, buy the fresh dozen in season for slices and whole fruit, and keep a tin of pulp for the dishes that need a smooth mango base. Many cooks use both in the same meal.

Ripening, safety and ordering

We do not use carbide. Our Alphonso mangoes are ripened naturally on hay beds. Calcium carbide is prohibited for ripening fruit in India under the Food Safety and Standards (Prohibition and Restrictions on Sales) Regulations, 2011, Regulation 2.3.5, and we are an FSSAI-licensed seller. Ask any seller how the fruit was ripened before you buy for a dessert.

To order, choose the Ratnagiri or Devgad Alphonso listing, pick the dozen, add it to your cart and enter your PIN code at checkout. Orders received before 1 PM are dispatched the same day. We dispatch by Blue Dart, and about 65% of Indian PIN codes get next-day delivery. Check your PIN code at checkout. Check the product page for the current price before you order.

For corporate gifting orders, shipping is charged extra, and the invoice shows the GST on that shipping. There is no GST on fresh mangoes.

People also ask

Which mango is best for mango dessert?

Alphonso is a good choice for dessert because its pulp is rich, creamy and non-fibrous. It blends into milk, cream and yoghurt smoothly. Choose ripe fruit that smells sweet at the stem end. For a different flavour, Kesar is a separate variety from Gujarat, and it is also sold on our store as a half-dozen or dozen box.

What is amrakhand made of?

Amrakhand is a thick, sweetened yoghurt flavoured with mango pulp and often cardamom. It is strained, sweetened and then mixed with pulp until smooth, and it is served chilled. Use fresh, thick yoghurt for the best texture, and let the mixture rest in the fridge before you serve it so that the flavour settles.

Can I make mango desserts with pulp instead of fresh fruit?

Yes. Pulp works well in panna cotta, mousse, kheer and rabri, because it blends smoothly into the base. Our Alphonso Mango Pulp Tin is available all year. Check the product page for the tin size that suits your recipe before you order.

How do I order mangoes for a dessert party?

Choose the Ratnagiri or Devgad Alphonso listing, pick the dozen that suits your guests, and add it to your cart. Enter your PIN code at checkout. We dispatch by Blue Dart, and about 65% of Indian PIN codes get next-day delivery.
