Tasty Mango basundi Recipe at home - AlphonsoMango.in

Mango basundi is a sweet, slow-reduced milk dessert from Gujarat and Maharashtra, finished with ripe Alphonso mango pulp. This mango basundi recipe shows how to reduce milk gently, sweeten it and fold in the pulp at the right time, so the dessert stays smooth.

What mango basundi is

Basundi is a traditional milk dessert made by reducing full milk in an open pan until it turns thick, sweet and nutty in flavour. It is especially loved in Gujarat and Maharashtra, where it is served at festivals and family meals. Mango basundi adds ripe mango pulp at the end, which gives the dessert its bright colour and a fresh, fruity taste against the cooked milk.

The method is simple, but it takes time. The milk has to be reduced slowly so that it becomes thick without catching on the base. That slow reduction gives basundi its depth. A fast boil will scorch the milk and give a burnt taste that no amount of mango can hide.

Choosing the mango for basundi

Alphonso is the mango most people choose for basundi, because its pulp is rich, creamy and non-fibrous. Wikipedia describes Alphonso pulp this way, which means it folds into the thick milk without leaving threads. Choose fruit that is fully ripe, sweet and fragrant, and blend the pulp smooth before you chill it.

  • Fresh Alphonso: about two ripe fruit make one cup of pulp. Taste the pulp and adjust the sugar in the milk to match.
  • Alphonso Mango Pulp Tin: a ready-to-use option that is available all year, so the dessert is not limited to the fresh fruit season.
  • Quantity: one cup of pulp for a litre of milk gives a clear mango flavour that still lets the milk taste come through.

Most of the work is patience. Keep an eye on the pan from the moment the milk starts to thicken, because the last ten minutes of reduction go quickly. A wooden spatula or a flat ladle helps you scrape the base and keep the milk moving.

Do not add the pulp while the milk is hot. Heat dulls the fresh flavour and can make the colour go flat.

This recipe serves four. Plan about an hour, most of it spent reducing the milk and then cooling it before you fold in the pulp.

Ingredients

  • 1 litre full-fat milk
  • 1/2 cup (100 g) sugar, adjusted to taste
  • 1/4 tsp ground cardamom
  • 1 cup Alphonso mango pulp, chilled
  • 1 tbsp slivered almonds and pistachios
  • a small pinch of saffron (optional)

Method

  1. Bring the milk to a boil in a wide, heavy-bottomed pan, stirring to keep it from sticking to the base.
  2. Lower the heat and simmer, stirring often, until the milk has thickened to a coating consistency, about 35 to 40 minutes.
  3. Stir in the sugar, cardamom and saffron if using, and cook for 5 more minutes.
  4. Take the pan off the heat and let the basundi cool completely, as it thickens further while it cools.
  5. Fold in the chilled mango pulp until evenly coloured.
  6. Chill for at least 2 hours and serve topped with the nuts.

Common mistakes are easy to avoid. The most frequent one is a narrow pan, which makes the milk reduce too slowly and forms a thick skin on the surface. The second is high heat, which scorches the base and gives a burnt flavour. The third is adding the mango too early, which blunts the fruit. Keep the heat low, stir often and wait until the basundi is cold.

For a more traditional texture, cook the milk a little longer so it thickens more. For a lighter dessert, reduce the milk to a slightly looser consistency and let the pulp do more of the work.

Spices, sweetness and texture

Cardamom is the classic spice for basundi. Some families add a pinch of nutmeg as well, and the powdered spice is easy to find. Our nutmeg powder is one option if you want to try it. Use a light hand, because nutmeg is strong and a small pinch is enough for a litre of milk.

Sugar should be added after the milk has thickened, not at the start. Adding sugar early can slow the reduction and make the milk stick. Taste the basundi once it is cool, because the cold dessert tastes less sweet than it does when warm, and add more sugar only if needed.

If the basundi is too thick after chilling, stir in a spoon of cold milk. If it is too thin, return it to the pan for a few minutes of gentle cooking, then cool it again before adding the mango pulp.

Serving and storing mango basundi

Basundi can be served in a shallow bowl so the surface is wide enough to show the colour of the mango. Garnish with a few pieces of fresh fruit if you have them, or with a thin line of extra pulp. Keep the portion small, because the dessert is rich.

Serve basundi chilled, in small bowls, with a little chopped nut on top. It is rich, so a small portion is enough after a meal. It also goes well with puri or a plain bread as a dessert spread.

Keep the dessert covered in the fridge and eat it within about two days. Do not leave it out at room temperature for long, because milk desserts spoil quickly in warm weather. Give it a gentle stir before serving, as the cream on top can separate slightly during storage.

People also ask

How do you make mango basundi?

Reduce a litre of full-fat milk over medium-low heat for 35 to 40 minutes, until it coats a spoon. Stir in sugar and cardamom, cool completely, then fold in one cup of chilled Alphonso mango pulp. Chill for at least two hours and top with almonds and pistachios.

How long does mango basundi last in the fridge?

Mango basundi keeps covered in the fridge for about two days. Use a clean container and keep it cold. Give it a gentle stir before serving, because the surface can separate a little during storage. Discard it if it smells sour.

Is basundi the same as kheer?

No. Kheer is usually made by cooking rice or vermicelli in milk. Basundi is made by reducing milk alone until it thickens, then adding sugar and flavourings. The taste is richer and more concentrated, and it has no grains in it.

Can I use mango pulp in basundi instead of fresh mango?

Yes. Chilled Alphonso mango pulp works well and is easy to measure. A tin of Alphonso Mango Pulp is available all year, so the dessert can be made outside the fresh fruit season. Add the pulp only after the milk has cooled.
