Alphonso Mango Rabri (Rabdi) - AlphonsoMango.in

Mango rabri is a slow-cooked milk dessert flavoured with saffron, cardamom and ripe Alphonso mango pulp. This mango rabri recipe shows how to reduce the milk, fold in the pulp and chill the dessert so it sets creamy and fresh.

What mango rabri is and how it differs from basundi

Rabri, sometimes written rabdi, is a North Indian dessert made by reducing full-fat milk slowly in an open pan until it turns thick, pale and creamy. Sugar, cardamom and saffron go in near the end. Mango rabri is the same dish with ripe mango pulp folded through, which gives it a soft orange colour and a clean fruit flavour. Basundi, the Gujarati and Maharashtrian cousin, is reduced in a similar way but is usually cooked to a looser, sweeter texture.

Why does the milk take so long? Milk is mostly water, and the slow simmer drives the water off while the milk proteins and sugars concentrate. That concentration gives rabri its thickness and its deep, cooked-milk flavour. Hurrying the process with a high flame does not save much time, because the milk only thickens evenly when it is kept at a gentle simmer.

The slow reduction is the whole secret. Milk that is rushed will scorch on the base and taste burnt. A heavy pan, low heat and patient stirring give a rabri that is smooth, rich and naturally sweet, and that holds its shape on a spoon once it is chilled.

Choosing the mango for rabri

The mango decides the colour, sweetness and smoothness of this dessert. Alphonso is a good choice because its pulp is rich and creamy. Wikipedia describes Alphonso pulp as rich, creamy and non-fibrous, so it blends without stringy strands. Look for fruit that is fully ripe, fragrant and soft at the stalk end. Under-ripe fruit will make the rabri sharp and pale.

  • Ripe Alphonso fruit: peel, stone and blend into a smooth pulp. About two fruit make one cup.
  • Alphonso pulp tin: ready to use and available all year, so you do not need to wait for the season.
  • Quantity: one cup of pulp per litre of milk gives a clear mango flavour without overpowering the milk.

Check ripeness by gently pressing the shoulder of the fruit. It should give slightly and smell sweet at the stalk. If the mango is still firm, leave it at room temperature for a few days, out of direct sun, and check it each day. Fruit that is firm when bought will soften and sweeten as it ripens, which is why a dozen can arrive at different stages.

If you use fresh fruit, blend it as close to the end as you can, because the colour darkens slightly after cutting.

Mango rabri recipe, step by step

Chilled mango rabri served in a clay pot with saffron and pistachios

This recipe serves four. Most of the time goes into reducing the milk, so set aside about an hour, and start with a pan that is wide enough for the milk to reduce quickly.

Ingredients

  • 1 litre full-fat milk
  • 3 tbsp sugar, adjusted to taste
  • 1/4 tsp ground cardamom
  • a generous pinch of saffron soaked in 1 tbsp warm milk
  • 1 cup Alphonso mango pulp, from about 2 ripe fruit
  • 1 tbsp chopped pistachios and almonds

Method

  1. Bring the milk to a boil in a heavy-bottomed pan, stirring often so it does not stick.
  2. Lower the heat and simmer, stirring from the base, until the milk has reduced by about half, 35 to 45 minutes.
  3. Add the sugar and cardamom and cook for 3 more minutes.
  4. Stir in the saffron milk, then take the pan off the heat and let the rabri cool completely.
  5. Fold in the mango pulp until evenly coloured, then chill for at least 2 hours.
  6. Serve cold, topped with the chopped nuts.

Do not add the mango pulp while the milk is hot. Heat can change the fresh flavour and make the colour dull, so wait until the rabri is cold before you fold the pulp in.

Tips for texture, colour and make-ahead rabri

If the rabri looks too thin after cooling, return it to a clean pan and simmer for five minutes more. It will thicken further as it chills. If it is too thick, stir in a spoon of cold milk. Saffron should be soaked properly, because whole threads left in the pan can stay hard and unpleasant.

Toast the nuts for a minute in a dry pan before you chop them. This brings out their flavour and keeps the topping crisp against the cold dessert. Keep the nuts for the top rather than stirring them through, so each spoon has some crunch and the rabri stays smooth.

Rabri is a good make-ahead dessert. It keeps covered in the fridge for about two days, and the flavour is often better after a few hours. Keep it cold until serving, and do not leave it out for long on a warm table.

Serving ideas and variations

Mango rabri is rich, so serve small bowls after a meal. For a softer texture, let it stand for a few minutes before serving, but keep it chilled otherwise. It also works spooned over warm puri or a slice of plain cake for a lighter treat. Some families add a few chopped mango pieces on top just before serving, for texture. For a milder version, use half the pulp and a little more milk. Skip the saffron if you do not have it; the dessert is still pleasant with cardamom alone, though the colour will be less golden.

People also ask

How do you make mango rabri?

Reduce a litre of full-fat milk over low heat for 35 to 45 minutes until it is about half its volume. Add sugar, cardamom and saffron, then cool the milk completely. Fold in one cup of ripe Alphonso mango pulp, chill for at least two hours and serve topped with pistachios and almonds.

How long does mango rabri last in the fridge?

Mango rabri keeps well covered in the fridge for about two days. Use a clean, airtight container, keep it chilled, and avoid letting it sit out at room temperature between servings. If it develops a sour smell, a change in colour or a slimy surface, throw it away without tasting.

Can I make mango rabri with mango pulp instead of fresh fruit?

Yes. Ripe Alphonso pulp works well in rabri and is easy to measure. The Alphonso Mango Pulp Tin is available all year, so you can make the dessert outside the fresh fruit season too. Add the pulp only after the milk has cooled, and taste the mixture before you chill it.

What is the difference between rabri and basundi?

Both start with slowly reduced full-fat milk and sugar. Rabri is usually cooked to a thicker, more layered texture, while basundi is looser and sweeter. Mango works in either, and the flavour is very similar once the pulp is folded in.
