Buying Alphonso mango in Madurai
Madurai is a long way from the Konkan coast, so most Alphonso on sale in the city has travelled through several hands before it reaches a shop. Ordering online cuts out some of those steps. How the fruit is ripened, and how to finish it in Madurai heat
We do not use carbide. Our Alphonso mangoes are ripened naturally on hay beds. Calcium carbide is prohibited for ripening fruit in India under Regulation 2.3.5 of the Food Safety and Standards (Prohibition and Restrictions on Sales) Regulations, 2011. At home, keep the mangoes at room temperature, away from direct sun, and let them soften on their own. Madurai is warm for much of the Alphonso season, so ripening can move faster than it does in a cooler city. Check the fruit every day from the day it arrives, rather than counting days on the calendar.
- Ripe signs: a sweet fragrance near the stalk and a slight give when you press gently near the shoulder.
- Do not refrigerate unripe fruit. Cold slows ripening and can dull the flavour.
- Once soft, eat the mango soon, or chill it briefly. Cut fruit keeps best in a closed container in the fridge.

Alphonso is harvested about February to June, and the best supply runs from March to May. The 2027 season opens on 1 February 2027. Outside the season we do not sell fresh Alphonso, because the trees give one crop a year. Alphonso pulp tins are available all year.
Ratnagiri and Devgad Alphonso sell from Rs 1,849 per dozen, and the largest Ratnagiri option goes up to Rs 5,399. A dozen weighs roughly 1.8 to 3.3 kg depending on grade. Using Alphonso pulp in Madurai kitchens
