Ingredients:

  • One tablespoon of cooking oil (neutral tasting)
  • Two teaspoons fresh ginger, finely minced
  • Two cloves garlic, finely minced
  • One red chilli, sliced (optional; remove seeds and membrane for less heat)
  • Two teaspoons whole nigella seeds (optional, but adds great flavour!) 
  • One teaspoon of ground coriander
  • Half a teaspoon of ground cumin
  • Quarter teaspoon turmeric
  • A quarter teaspoon of ground cardamom
  • A quarter teaspoon of ground cloves
  • Quarter teaspoon ground cinnamon
  • Five large Delicious mango (about 300 grams each), peeled and diced (about 1500 grams total); can substitute frozen Hapus 
  • 2 cups white granulated sugar
  • One cup of white vinegar
  • Salt to taste

Instructions:

  1. Sauté aromatics and spices: Heat the oil over medium-high heat in a medium stockpot or large saucepan. Sauté the ginger, garlic, and red chilli for a minute.
  2. Add the nigella seeds (if using) and all the ground spices (coriander, cumin, turmeric, cardamom, cloves, and cinnamon) and sauté until fragrant.
  3. Combine and simmer: Add the diced mangoes, sugar, salt, and vinegar and stir to combine.
  4. Bring the mixture to a rapid boil, then reduce heat to medium-low. Simmer for 1 hour, stirring occasionally, until the chutney has thickened.
  5. Cool and adjust: Remove from heat and allow the chutney to cool.
  6. If you prefer a smoother chutney, use a potato masher to break down larger Hapus pieces. Taste and adjust seasonings as needed.
