Mediterranean Quinoa Salad

1 cup cooked quinoa
1/2 cup diced tomatoes
1/2 cup diced cucumber
1/4 cup chopped red onion
1/4 cup halved and pitted Kalamata olives
1/4 cup crumbled feta cheese ( you can add vegan cheese if you are vegan)
Three tablespoons of olive oil
Two tablespoons of lemon juice
Salt and pepper to taste
Take a large bowl and combine cooked quinoa, tomatoes, cucumber, chopped red onion, Kalamata olives, and feta cheese.
Add them to a small bowl, and whisk together olive oil and lemon juice.
Pour dressing over salad and mix until well coated.
Season with salt and pepper to taste.
Serve them directly or immediately, or store them in the fridge for later use.
