Rainbow Veggie Salad with Peanut Dressing

Ingredients:
One cup of cooked quinoa
One cup of shredded carrots
One cup diced red bell pepper
One cup diced yellow bell pepper
One cup of diced cucumber
1/4 cup chopped fresh cilantro
Three tablespoons of creamy peanut butter
Two tablespoons of rice vinegar. If you don't have rice vinegar, you may use apple cider vinegar.
One tablespoon honey
One tablespoon of sesame oil
Salt and pepper to taste
Directions:
Add them to a large to medium bowl as per the availability.
Combine cooked quinoa, shredded carrots, diced red and yellow bell peppers, diced cucumber, and chopped cilantro.
Whisk together peanut butter, rice vinegar, honey, and sesame oil in a small bowl.
Pour peanut butter dressing over salad and mix until well coated.
Season with salt and pepper to taste.
Serve them immediately, or you may store them in the fridge for later use.
