Ingredients:
1 cup cooked quinoa
1 cup corn kernels
1 cup of black beans
1/2 cup diced tomatoes
1/2 cup diced red onion
1/4 cup chopped fresh Cilantro
Three tablespoons of olive oil
Two tablespoons of lime juice
One tablespoon of chilli powder
Salt and pepper to taste
Directions:
In a large bowl, combine cooked quinoa, corn kernels, black beans, tomatoes, red onion, and chopped cilantro.
Whisk together olive oil, lime juice, and chilli powder in a small bowl.
Pour dressing over salad and mix until well coated.
