Southwest Quinoa Salad
It is a great healthy way to get your daily veggies in McDonald's style.
Loved by most of the youths very good salad as fiber intake during weight loss.
This Quinoa salad is packed with protein and fiber, making it a filling and satisfying meal.
To make this salad, cook quinoa according to package instructions.
In a large bowl, combine cooked corn kernels, quinoa, black beans, tomatoes, red onion, and chopped cilantro.
Whisk together olive oil, lime juice, and chili powder in a small bowl.
Pour dressing by sprinkling over salad and mix until well coated.
Season with salt and pepper to taste.
Serve them immediately, or you may store them in the fridge for later use.
Southwest quinoa salad recipe
1 cup cooked and cooled quinoa
One large tomato, diced
1/2 cup cooked black beans
1/2 small red onion, diced
One avocado, diced
1/2 lime, juiced
One tablespoon of olive oil
1/4 teaspoon chili powder
1/4 teaspoon ground cumin
Salt and pepper to taste
Add a large bowl, combining fluffed cooked quinoa, diced tomatoes, black beans, red onion, and avocado.
Drizzle with lime juice, olive oil, chili powder, cumin, and salt and pepper to taste.
Toss to combine.
Serve at room temperature or chilled. Enjoy!
