Technically or traditionally, Alphonso Mangoes are ripened after Gudi Padwa, that is, in the first week of April, not before all those mangoes that are not ripe on the tree.

Using Calcium carbide is illegal or banned for use by the government for mangoes as it could lead to cancer. 

Calcium Carbide is illegal by the FDA under the FSSR 2011 & FSSA 2006, which is very harmful to the health of human beings. Calcium is a carcinogenic substance that is very dangerous for humans and may cause cancer; we should refrain from eating mangoes ripened with carbide. These mangoes, as per doctors, have been strictly banned by doctors due to harmful medical effects on the human body, but potentially it is very harmful.

How to detect Alphonso Mangoes ripened using calcium carbide.

  • Artificially Ripened Mangoes using Calcium Carbide
    • When Artificially ripened Alphonso Mangoes are dropped in a bucket of water, they will float on the water.
    • Artificially ripened mangoes with calcium carbide weigh less and are less juicy to taste.
    • By Detection of Acetylene gas C₂H₂ because Alphonso Mango release acetylene gas if Calcium carbide is used for ripening mangoes
    • Match Stick test light a match stick bring it near the box of Alphonso Mango which is ripened using calcium carbide it may catch fire or sparkles traces is present in Alphonso Mango surface.

Caution does not attempt this test in the proximity of the whole crate of Alphonso Mango. The usage of calcium carbide releases a good amount of acetylene gas, which may lead to an explosion, so be careful while lifting the match stick test near Alphonso Mango with calcium carbide.

    • Chemical Test Reagent Solution 1 Chemical Test by preparing reagent solution of Cupric Chloride (CuCl2 ) 1.5 gm, Ammonium Chloride (NH4Cl ) 3 gm in 20 ml of Ammonia solution dilute this solution to make it to 50 ml

Reagent Solution 2 mixes hydroxylamine hydrochloride (HONH2·HCl) in 50 ml of water.

Test Solution is a mixture of Reagent solution 1 – 20ml and Reagent Solution 2 – 40 ml; take a Whatman no. 1 filter paper, dip it in the test solution, and place this Whatman no one paper near a pile of mango or alphonso mango box or storage whichever you want to taste now Acetylene gas which is generated due to usage of calcium carbide on your Alphonso Mangoes will start to reaction on Whatman no one paper and start to change the Whatman no one paper color to brownish-purple or reddish-brown due to acetylene gas released by Alphonso Mangoes that indicates that your mangoes are ripened using Calcium carbide.

Another method is Alphonso. Mango fruit starts to get black patches in 2 to 3 days due to the usage of calcium carbide for ripening of Mango fruit.

Traces of white color powder arsenic traces are found on the mango fruit; if Calcium Carbide is applied, there will be traces of arsenic powder white powder.

Carbide turns the Alphonso Mango fruit to yellow or saffron color, but the inner section remains unripe; the flesh of Alphonso Mango but sweetness and moisture are missing as carbide kills sugar content from Alphonso Mango nutrients.

Naturally Ripened Alphonso Mangoes
