The tequila's agave bitterness cuts the honey note in Ratnagiri pulp cleanly. No simple syrup needed — the Brix carries the sweetness.

Mango Mojito

60 ml white rum, 80 ml Alphonso mango pulp, 30 ml lime juice, 8 fresh mint leaves, soda water, crushed ice. Muddle the mint lightly — don't bruise it into bitterness. Add pulp and rum, stir, top with soda. The pulp's silky texture blends with the carbonation without going foamy.

Mango Daiquiri

The ginger syrup adds the bite that spirits would otherwise provide, and the pulp's 18–24° Brix means the drink needs no additional sugar. Suitable for children and for guests who don't drink alcohol — the flavour holds because the pulp is genuine, not diluted concentrate.

Season, Storage and Honest Limits

Fresh Alphonso runs February to June, with peak sweetness in March, April, and May. Outside those months, we don't sell fresh fruit. We won't stretch the season with fruit held in cold storage — that practice produces a blander mango and a worse cocktail.

The pulp tin solves the July-to-January gap. Sealed, it stores at room temperature until opened. Once open, refrigerate and use within 2–3 days. For cocktail prep, an unopened tin left in the refrigerator for 2 hours before service gives you a cold base that chills the drink faster and reduces ice dilution.

Fresh mangoes dispatched during the March–June season arrive at 70–80% ripeness — firm enough for transit, fully ripe within about three days of delivery.
