Most questions we receive about mango freezer storage come from customers who just received a box and cannot eat all 12 mangoes before they turn. Fair problem. Here is what we know from watching thousands of boxes land in homes across India.
Home Freezer Reality
A standard home freezer sits between 0°C and -18°C. Alphonso pulp is roughly 75–80% water. When that water freezes, ice crystals form and pierce the cell walls. Thaw the mango and you get a softer, wetter, less fragrant fruit. The Brix reading does not change — the sugar is still there — but the texture and aroma that make Alphonso worth ₹590 a tin are diminished.

The 12-month figure requires a blast chiller that drops fruit temperature to -18°C in under 30 minutes, sealing the cells before large crystals form. No domestic freezer does that. If someone tells you to freeze whole Alphonso for a year at home, they have not tried eating it after.
How to Freeze Mango at Home (If You Must)
- Let the mango ripen fully — firm fruit freezes badly and tastes worse.
- Peel, remove the stone, and cut into cubes or slices.

Nutrition You Lose When You Freeze
Ripe Alphonso pulp contains roughly 30–36 mg of vitamin C per 100 g — about 40–45% of the ICMR-NIN 2020 RDA for adult men (80 mg/day) and about 50% for adult women (65 mg/day). Freezing degrades vitamin C. Repeated freeze-thaw cycles make it worse. If you are eating mango partly for the vitamin C, fresh or tinned pulp is nutritionally sounder than home-frozen fruit stored for months.
Mangiferin, an antioxidant in Alphonso pulp, showed anti-inflammatory activity in cell studies (Govindappa et al., 2011). Whether home freezing degrades mangiferin significantly has not been studied in Alphonso specifically — we will not speculate.
The practical point: eat fresh in season, use good pulp off-season. Freezing is a last resort for convenience, not quality.
