Devgad fruit tends to score 2–3 Brix higher than Ratnagiri in peak-season grading — which is why it carries a small price premium and why most of our export packs are Devgad. For a milkshake, either works beautifully, but the higher natural sugar in Devgad means you need less added sugar in the recipe.

A mango milkshake made with Alphonso Hapus is not the same drink as one made with grocery-store fruit. The Brix differential alone — 22–25°Bx versus the 14–16°Bx typical of supermarket mangoes — means you get a richer, more intensely coloured shake without loading in extra sugar. This recipe works with either Ratnagiri or Devgad fruit.

Devgad Alphonso measures 22–25°Bx at peak ripeness. Higher Brix means more dissolved sugars and a denser flavour, so a 150 g portion of Devgad pulp can sweeten 250 ml of whole milk without any added sugar — practical if you are controlling your calorie intake.
