Carbide-ripened mangoes ripen uniformly from the outside in. They look ripe. They are not. The pulp is pale, fibrous, and flat in flavour.
Every mango from AlphonsoMango.in ripens in natural hay beds — the same method used by Konkan farmers for generations. The hay regulates temperature, prevents bruising, and allows the fruit to develop its full Brix naturally. Ripening takes 2–4 days after harvest depending on the maturity at picking.
This is the honest limitation: naturally ripened fruit has a shorter shelf life than carbide-treated fruit. Once ripe, eat within 2–3 days at room temperature or refrigerate for up to 5 days.
