Both varieties are sourced from 48 coastal villages of Ratnagiri and Devgad in the Konkan belt of Maharashtra. The coastal laterite soil and sea-facing microclimate are responsible for the high Brix readings that no inland mango variety matches.

What Makes Konkan Alphonso Different?

The Konkan coast receives the sea breeze year-round. This keeps temperatures moderate even in May. The laterite (red murram) soil drains fast and concentrates sugars in the fruit. No other region replicates this combination. That is why GI certification was awarded specifically to Ratnagiri and Devgad Alphonso — and why imitation Alphonso from Karnataka or Gujarat cannot match the Brix levels.

What Is the Brix Level of Devgad Alphonso?

Devgad Alphonso tests between 20° and 22° Brix at peak season. Ratnagiri Alphonso typically reads 18°–20°. Anything below 16° Brix is considered off-season or poor-grade fruit. We only dispatch after on-farm Brix checks.

What Is Hay-Bed Ripening?

After harvest, mangoes are laid on beds of dry paddy straw (hay). The straw insulates the fruit, retains a small amount of ethylene, and allows uniform ripening over 3–5 days. No chemicals are used. No calcium carbide. No ethylene gas injections. The result is a fruit that ripens from the inside out — the way it would on the tree.

How to Tell If a Mango Was Carbide-Ripened

Carbide-ripened mangoes ripen skin-first. The outside turns yellow while the flesh near the seed stays white and tasteless. Natural hay-ripened Alphonso ripens evenly. The flesh is uniformly golden, and the aroma is present even before you cut it. Press gently near the stem — a slight give across the whole surface, not just near the tip, signals natural ripeness.

How to Store 1 Dozen Mangoes

Unripe Mangoes

Keep them at room temperature. Do not refrigerate unripe mangoes — cold halts ripening permanently and damages the flesh. Place them in a single layer. Do not stack. A paper bag around them speeds ripening by trapping natural ethylene.

Ripe Mangoes

Once fully ripe, refrigerate and consume within 2–3 days. Do not keep ripe Alphonso at room temperature for more than 24 hours in summer — it ferments quickly due to the high sugar content.

Cut Mango

Store cut mango in an airtight container in the refrigerator. Use within 48 hours. For longer storage, freeze cut cubes on a tray first, then bag them. Frozen Alphonso cubes hold flavour for up to three months and work well in smoothies and mango smoothie recipes.
