Alphonso Mango in Kannada — Names, Varieties and Origin
In Kannada, Alphonso mango is called ಅಲ್ಫೋನ್ಸೋ ಮಾವು (Alphonso Maavu) or ಹಾಪುಸ್ ಮಾವು (Hapus Maavu). The word "ಮಾವು" (maavu) is the Kannada term for mango. Karnataka buyers — especially in Bengaluru, Mysuru, and Dharwad — search for both names, and both land at the same fruit.
The mango grows in the Konkan coastal belt of Maharashtra, specifically across Ratnagiri and Sindhudurg districts (Devgad taluka). The GI tag covering this region was registered under GI No. 139, with the certificate dated 16 October 2019. No mango grown elsewhere can legally carry the Alphonso GI designation from Ratnagiri or Devgad.

Kannada speakers sometimes ask whether Ratnagiri, Devgad and Kesar are the same variety. They are not. Here is how they sit:
- ರತ್ನಗಿರಿ ಅಲ್ಫೋನ್ಸೋ — grown on the Ratnagiri coastline, golden-yellow skin, intensely aromatic, non-fibrous pulp. Widely considered the benchmark for flavour. Exported to the US, UK, UAE, Singapore, and Japan.
- ದೇವಗಡ ಅಲ್ಫೋನ್ಸೋ — grown in Devgad, Sindhudurg. Slightly tangy, fuller weight (up to 300 g), and carbide-free. The skin separates cleanly; you can eat it straight off the peel.
- ಕೇಸರ್ ಮಾವು — grown primarily in Gujarat's Gir region and parts of Maharashtra. Saffron-coloured pulp, medium-sized fruit, oval-oblique shape. Distinct from Alphonso but often sold alongside it during the same season window.
Each fruit weighs between 150 and 300 grams. Alphonso farmers in Konkan call it a "golden crop" — ಬಂಗಾರದ ಬೆಳೆ — because a single well-managed orchard earns more per acre than most other regional produce.
How We Ripen: Hay-Bed Method
The mangoes arrive from our 48-village network still firm — harvested at the correct maturity stage, not at full ripeness. We lay them on beds of dry paddy hay, which is the traditional Konkan method. Hay maintains an even temperature around the fruit and absorbs the ethylene the mangoes release naturally. This produces the even golden colour and the clean, non-fermented sweetness that carbide-ripened fruit cannot match.
Carbide ripening forces colour change from outside in. Hay ripening follows the fruit's own timeline. You can tell the difference the moment you cut the fruit open: natural hay-ripened Alphonso has a uniform saffron-orange interior all the way to the seed; carbide-treated fruit often shows a pale or stringy core even when the skin looks ripe.

Storage and Preservation
- If the mangoes arrive firm, leave them at room temperature, loosely wrapped in newspaper. They will ripen in 2–4 days depending on ambient heat. Warmer rooms speed this up.
- Do not refrigerate unripe Alphonso. Cold interrupts the ripening process and produces an uneven, chalky texture inside.
- Once fully ripe, you can move them to the fridge for up to 2 days. Eat within that window for best flavour.
- Cut mango can be stored in an airtight container in the fridge for up to 24 hours. Beyond that the aroma deteriorates noticeably.
- For longer preservation, blend ripe Alphonso into Aamras and freeze it in small portions. It holds well for up to 3 months.
