A good aam cut depends on a well-ripened fruit. Colour is not a reliable indicator. Carbide is commonly used across markets to artificially turn skin yellow. AlphonsoMango.in never uses carbide. How to Do an Aam Cut — Step by Step
You need three things: a sharp chef's knife, a small paring knife, and a stable cutting board.
- Rinse the mango under cold water. Pat dry.
- Stand it upright on the cutting board, stem end up. The flat seed runs vertically through the centre.
- Place the knife about 1 cm to one side of the stem. Slice straight down. You will feel if the knife hits the seed — adjust slightly outward.
- Repeat on the other side. You now have two large halves — called "cheeks" — and the seed section in the middle.
- Score each cheek in a crosshatch pattern, cutting down to but not through the skin.
- Push the skin upward from underneath so the cubes fan out. This is the hedgehog aam cut.
- Run the knife along the skin to release the cubes into a bowl.
- Trim the remaining flesh from the seed section using the paring knife. This strip is often the sweetest part.
