Prashant Powle's team starts harvest at 3:20 am — Brahma Muhurta, before sunrise. This is our SOP, not a marketing phrase. Post-sunrise temperatures and humidity accelerate sap flow in the stem scar, which affects shelf life. Cutting before dawn keeps the scar dry and reduces the risk of sour-stem rot in transit.

Roughly 80% of the ripening process is complete on the tree at harvest. The remaining 20% happens on natural hay beds at our facility — no ethylene chambers, no carbide. A mango picked too early and carbide-ripened gives a uniform yellow colour but flat flavour and gritty texture. Ours arrive with the fibre soft, the aroma forward, and the saffron-orange interior intact.
