Where Our Alphonso Comes From
Prashant Powle started sourcing directly from Konkan farmers in 2017. The operating entity, Powle Home Foods, was registered in July 2019. By the 2020 season we had the first full commercial dispatch running. We now work with 100+ partner farmer families across 55 named villages in Ratnagiri and Sindhudurg districts — sea-facing orchards, typically 12–25 years old, selected on Brix consistency and alternate-bearing management.
On the Ratnagiri side: Pawas, Golap, Nachane, Mavalange, Waravade, Purnagad, Gaonkhadi, Ambeshet — among others. On the Devgad and Sindhudurg side: Devgad, Jamsande, Vijaydurg, Dahibav, Kunkeshwar, Mithbav, and more. The Malvan packing centre handles southern Sindhudurg fruit; the Devgad packing point handles the Devgad taluka harvest.
Every fruit is hand-harvested using a Nutan/Zela pole fitted with a catching net. The tree is never shaken, the fruit never falls. For tall trees, an indigenously developed length-extending pole with a camera is used so the harvester can see the fruit before cutting. That one practice eliminates the bruising at the shoulder that causes soft-nose in transit.
How Every Mango Is Graded
Every fruit is weighed. AI and ML-assisted machine scanning then checks each mango for internal issues (spongy tissue is the main one) and external deformities before packing. We assumed hand-grading alone was sufficient in our first two seasons — the grading table data showed otherwise. Spongy tissue does not always show on the surface; the scanner catches what human eyes miss.
Residue testing runs weekly through the season at Envirocare Labs Pvt. Ltd., Thane (NABL accredited, certificate TC-8284). The April 2025 report (01/ETHAP2500044, issued 5 April 2025) tested 28 residues — all within Codex maximum residue limits, 27 of 28 below the limit of quantification (0.01 mg/kg). One residue, thiamethoxam, was detected at 0.013 mg/kg against a Codex limit of 0.2 mg/kg. We say "independently tested, all residues within Codex limits" — not "pesticide-free."
Natural Ripening — What It Actually Means
Hay-bed ripening (called Aadi ripening locally) is not a marketing phrase. The fruit sits on a hay bed in a temperature-controlled room at our Mumbai packhouse for 24–48 hours. No ethylene gas is piped in. No calcium carbide is used at any stage. The temperature control prevents over-ripening, not artificial acceleration. The process is monitored, not triggered.
Carbide-ripened mangoes reach full colour quickly but the flavour never catches up. The pulp stays stringy and slightly bitter at the base. Hay-ripened Alphonso develops from the seed outward — the seed cavity softens first, then the shoulders, then the tip. You can feel the sequence when you press the fruit gently over three days after delivery.
What is Aadi ripening for Alphonso mango?
Aadi is the traditional Konkan practice of burying or bedding harvested mangoes in dry hay. The hay creates a microclimate — slightly higher CO₂, consistent humidity, no direct air movement — that allows the fruit's own ethylene to accumulate and trigger ripening. It is slower than gas chambers (24–48 hours versus 12–18 hours for carbide) but the flavour compounds develop fully. This is the only ripening method used at our Mumbai packhouse.
Storage and Ripening at Home
Your box arrives with fruit at 70–80% ripeness. Keep the mangoes at room temperature, out of direct sun. Do not refrigerate unripe Alphonso — cold stops the ripening process and the flavour never recovers. Once the fruit is fully ripe (skin turns golden yellow, gives slightly to thumb pressure, fragrance is strong), you can refrigerate for one day before eating. Eat within 24 hours of refrigerating. Madurai's heat in April–May means ripening completes faster than in, say, Delhi — usually within two days of delivery rather than three.
How do you know when Alphonso mango is ripe?
Colour alone is unreliable — Alphonso can be ripe and still show green patches. Use fragrance (strong, floral, near the stem end) and gentle thumb pressure (slight give across the shoulders, not at the tip). If only the tip is soft, it is not fully ripe yet.
Nutrition
Ripe Alphonso pulp contains roughly 30–36 mg of vitamin C per 100 g. A 100 g serving covers about 40–45% of the ICMR-NIN 2020 RDA for adult men (80 mg/day) and about 50% for adult women (65 mg/day). Alphonso also contains mangiferin, a polyphenol studied by Govindappa et al. (2011) for anti-inflammatory activity in cell models. That is one cell study — not a clinical claim — but the compound is real and measurable in the pulp.
