What Is Aamba Vadi?

Aamba vadi — also written amba wadi, amba vadi, or aamba wadi — is a traditional Indian mango burfi. The word aamba means mango in Marathi and Konkani. Vadi means a small cut piece or fudge square.

The sweet has roots in Maharashtra and coastal Karnataka. Konkan households have made it for generations using the season's first ripe Alphonso pulp. The vibrant saffron-yellow colour comes entirely from natural mango — no artificial dye needed when Alphonso is the base.

Aamba vadi is denser than aamras. It slices clean. You can pick it up with your fingers. It holds its shape at room temperature for 2–3 days without refrigeration.

How Is Aamba Vadi Different from Aamras?

Aamras is poured. Aamba vadi is cut. Aamras is served fresh and cold. Aamba vadi is cooked down, set, and stored. Both start with the same Alphonso pulp — but aamba vadi loses moisture through slow cooking, concentrating every unit of sweetness and aroma into a dense square.

Why Use Alphonso Mango for Aamba Vadi?

Alphonso mango pulp is fibreless, low in water, and naturally high in sugar — 22–23° Brix at peak season. That means less cooking time to reach the right consistency, a brighter natural colour, and a more intense flavour. Other mango varieties produce a thinner, less aromatic vadi.

Aamba Vadi Recipe — Step by Step

Duration: 8–10 minutes active cook time. 10 minutes setting time.

Ingredients

  • 100% pure Alphonso mango pulp (sweetened)
  • Castor sugar or stevia — to taste (skip if pulp is pre-sweetened)
  • Pure cow ghee — for greasing the mould
  • Cardamom (elaichi) powder — ¼ tsp
  • Saffron strands — optional, 5–6 strands
  • Poppy seeds — optional, for topping
  • Dried ginger powder (सुंठ / sunth) — optional

Method

Step 1. Place a nonstick pan on medium flame. Pour in the Alphonso mango pulp. Stir continuously. When the pulp starts to bubble, reduce the flame to low-simmer.

Step 2. Continue stirring. The pulp reduces to roughly half its original volume. At this point, add sugar or stevia only if you want extra sweetness — the pulp is already sweet. Add saffron strands and cardamom powder. Stir them in.

Step 3. Keep stirring on low flame until the mixture pulls away from the sides of the pan and holds a shape when you press it with the back of a spoon. This is your setting point.

Step 4. Grease a flat mould or tray with pure cow ghee. Pour the mixture in. Spread it evenly to a thickness of about 1 cm. Let it rest for 10 minutes at room temperature.

Step 5. Once set, use a sharp knife to mark squares or rectangles. Sprinkle poppy seeds or sunth on top if desired. Cut through completely and lift the pieces out.

  • Never leave the pan unattended. The mixture scorches fast on high heat.
  • Use a silicone spatula — it reaches the pan edges cleanly.
  • For a firmer vadi, cook two extra minutes on low after the mixture pulls from the sides.

Aamba vadi adapts well. Here are common variations found across Maharashtra and Gujarat.

Saffron Aamba Vadi

Add 8–10 saffron strands to 2 tablespoons of warm milk. Stir this into the mango mixture just before setting. The colour deepens to a rich amber and the aroma intensifies.

Dry Fruit Aamba Vadi

Press cashew halves or slivered pistachios onto the surface while the vadi is still warm. They embed cleanly as the mixture sets.

Sugar-Free Aamba Vadi

Replace sugar with stevia or erythritol in equal visual measure. The texture is slightly softer because erythritol does not crystallise the same way. Chill the vadi before cutting for cleaner squares.

Khoya Aamba Vadi

Add 2 tablespoons of crumbled khoya (mawa) to the pulp in Step 2. The milk solids add richness and help the vadi set firmer at room temperature. This is the festival version — served at Diwali and Raksha Bandhan.
