Almond Milk Mango Smoothie Recipe
This recipe uses one medium Alphonso (180–225 g), which gives roughly 120–140 ml of pulp at peak ripeness. At Devgad Brix levels of 20–24°, you will not need honey. At Ratnagiri Brix closer to 18 to 24° early in March, add half a teaspoon if you want.
Ingredients (one serving)
- 1 ripe Alphonso mango, peeled and diced (or 120 ml Alphonso mango pulp)
- 200 ml homemade almond milk (see below)
- 1 teaspoon chia seeds
- Pinch of cardamom
- Optional: half a teaspoon of raw honey if using early-season Ratnagiri fruit
Method
- Soak chia seeds in two tablespoons of cold water for ten minutes. They swell and gel — this thickens the smoothie without starch.
- Blend mango, almond milk, cardamom and soaked chia seeds on high for forty-five seconds.
- Pour. Top with a small handful of roasted sunflower seeds for crunch and a toasted note that contrasts the fruit.
Blending time matters. Forty-five seconds is enough for a completely smooth texture. Beyond ninety seconds, Alphonso pulp oxidises slightly and the colour dulls from deep saffron to pale yellow.
Can I use frozen mango?
Yes. Freeze ripe Alphonso segments during peak season (April–May) and use them through June. Frozen Alphonso at 20–24° Brix still outperforms most fresh commercial mangoes. Do not freeze before the fruit is fully ripe — the fibre texture firms up and the flavour concentrates unevenly.
How to Make Almond Milk at Home
Store-bought almond milk typically contains 2–4% almonds, carrageenan, and added sugar. Homemade gives you roughly 200 ml from 30 g of soaked almonds with nothing added.
Method
- Soak 30 g raw almonds in cold water for eight hours (or overnight). Drain and rinse.
- Blend with 200 ml cold water for sixty seconds.
- Strain through a double layer of muslin or a nut-milk bag. Squeeze firmly.
- Use immediately. Refrigerate any remainder and use within two days.
The strained milk is thin, naturally sweet, and does not fight a Devgad Alphonso at 22° Brix. That is the point. Commercial almond milk with vanilla flavouring or stabilisers competes with the mango's saffron-honey notes. Homemade does not.
Almond milk benefits and side effects: what to know
Almond milk is lactose-free, low in calories, and easy to digest for most people. It contains vitamin E naturally. The main side effect is allergic reaction in people with tree-nut allergies — rare, but real. If you have a tree-nut allergy, skip it entirely and use coconut water or oat milk instead. Homemade almond milk contains no added sugar, which matters if you are watching glycaemic load alongside a fruit-heavy smoothie.
Nutrition: What You Actually Get
A 100 g serving of ripe Alphonso pulp contains roughly 30–36 mg of vitamin C. That covers about 40–45% of the ICMR-NIN 2020 RDA for adult men (80 mg/day) and about 50% for adult women (65 mg/day). One medium Alphonso in a smoothie contributes meaningful vitamin C without supplements.
Alphonso also contains mangiferin, a xanthonoid with anti-inflammatory activity studied in cell models by Govindappa et al. in 2011. That is a cell study, not a clinical trial — we are not claiming it cures anything. The fruit is genuinely nutritious without needing inflated claims.

One teaspoon of chia seeds (roughly 5 g) adds about 1.7 g of omega-3 fatty acids (ALA), 2 g of fibre, and 1.7 g of protein.
